Authentic Sri Lankan Fried Chicken Curry Recipe
This is not your regular Chicken Curry because the Chicken has been fried first to give it an amazing depth of flavor. This is how my mom prepares Chicken Curry. You can even use Coconut Milk to cook this curry. It is very simple to prepare and is popular when it comes to Sri Lankan Rice and Curry.
Ingredients
- 500g of Chicken.
- 2 tsp of Pepper
- Salt
- 3 tsp Chili Powder
- 2 tsp Curry Powder
- Some Fenugreek Seeds
- Some Turmeric Powder
- 1.5 tsp Raw Curry Powder
- Piece of Goroka
- 1 Onion thinly sliced
- Some Pandan Leaves (Rampe)
- Some Curry Leaves
- 2 sliced Green Chilies
- Some crushed Ginger
- 2 crushed Garlic Cloves with the skin
Instructions
- Take 500g of Chicken and cut into small pieces and then wash it.
- Add some Pepper and Salt to the Chicken and set it aside for 30 minutes to season.
- Then deep fry the Chicken pieces.
- After frying, take the Chicken pieces off the stove.
- Add the fried Chicken to a pot.
- Add 3 tsp Chili Powder.
- Add 2 tsp Curry Powder.
- Add some Fenugreek Seeds.
- Add 1 tsp Black Pepper.
- Add some Turmeric Powder.
- Add 1.5 tsp Raw Curry Powder.
- Add Salt to taste.
- Add a piece of Goroka.
- Add half a thinly sliced Onion.
- Add some Pandan Leaves.
- Add some Curry Leaves.
- Add a 2 sliced Green Chilies.
- Add some crushed Ginger.
- Add Water until the Chicken is covered.
- Heat some Oil in a Clay pot.
- Add some diced Onion.
- Add 2 crushed Garlic Cloves with the skin.
- When the Onion and Garlic Cloves turn a golden color, add the Chicken mixture.
- Since there is spice residue in the Chicken mixture bowl, we can add some Water to collect the residue and then add to the Clay pot also.
- Cook over medium heat.
- Let it cool down so that it increases the flavor and becomes tastier.
