Traditional Sri Lankan Naran Kawum Recipe

Naran Kawum is a Sri Lankan sweetmeat that contains a sweet moist Coconut filling that is covered in a crispy outer shell and is specially made for Sri Lankan New Year's. The Coconut filling is made by mixing Caramelized Sugar with freshly grated Coconut. The filling is then rolled up into a ball, dipped in a batter made from Rice Flour, and then fried. It's very easy to make in only about 30 minutes and requires only a few ingredients.

Total Time: 30 minutes

Ingredients

  • 750g of Sugar
  • 1 and a half grated Coconuts
  • Thickened Coconut Milk from half a grated Coconut
  • Cumin Seeds
  • Salt
  • Rice Flour
  • Turmeric Powder

Instructions

  1. Heat 1 tbsp of the 750g of Sugar in a saucepan over medium heat.
  2. When the Sugar starts turning dark brown, add half a cup of Water.
  3. Now add the remaining Sugar.
  4. Cook all the Sugar has melted and it is bubbling.
  5. Then add 1 and a half grated Coconuts.
  6. Mix the grated Coconut and Caramelized Sugar together thoroughly.
  7. Now add some Cumin Seeds.
  8. Add Salt to taste.
  9. Mix frequently and keep cooking.
  10. Once you get a thickened mixture that is a dark brown color, turn off the stove.
  11. Let this mixture cool down until it is safe enough to handle.
  12. Now scoop some of the mixture into your hands and roll into a ball and repeat until all the Naran Kawum are formed.
  13. For the batter, add thickened Coconut Milk from half a grated Coconut into a bowl.
  14. Add Rice Flour, a little at a time, while mixing to form a batter.
  15. Add some Turmeric Powder (not too much).
  16. Add Salt to taste.
  17. Mix thoroughly.
  18. The batter should fall in strands without breaking apart when you lift your hand from the bowl.
  19. Heat Oil in a saucepan over medium heat for deep frying the Naran Kawum.
  20. Dip each of the Naran Kawum in the batter and then fry it until it is a golden color.
