Bakery style Crispy Egg Puffs using basic ingredients

Crispy Egg Puffs are a flaky pastry that makes a tasty teatime snack. These Egg Puffs have a filling of Potatoes, Bell Peppers, Chilies, Spices, and eggs. This goes best with a nice strong ginger tea.

Ingredients

  • 250g of All Purpose Flour
  • Salt
  • 1 tbsp of Ghee (or Butter)
  • 1 sliced Onion
  • 2 sliced Green Chilies
  • Some diced Bell Pepper
  • Some Ginger and Garlic blended into a paste
  • Some Maldive Fish (optional)
  • Some Pepper
  • 1 tsp of Chili Flakes
  • Some boiled Potatoes that are mashed
  • 3 tbsp Corn Flour
  • Some boiled Eggs

Instructions

  1. Add 250g of All Purpose Flour into a bowl.
  2. Add Salt to taste.
  3. Add 1 tbsp of Ghee (or Butter).
  4. Stir everything together by hand.
  5. Now while mixing, mix Water in slowly and form the dough.
  6. Set this dough aside for about 10 to 15 minutes so it becomes soft.
  7. Heat some Oil in a saucepan.
  8. Add a sliced Onion.
  9. Add some Curry Leaves.
  10. Add 2 sliced Green Chilies.
  11. Add some diced Bell Pepper.
  12. Add some Ginger and Garlic Cloves blended into a paste.
  13. Add some Maldive Fish.
  14. Mix everything together.
  15. add some Black Pepper.
  16. Add Salt to taste.
  17. 1 tsp of Chili Flakes.
  18. Mix everything together thoroughly.
  19. Add some boiled Potatoes that are then mashed
  20. Mix everything together thoroughly.
  21. Add 3 tbsp of Corn Flour into a bowl.
  22. Mix as much Oil as needed to make a runny batter.
  23. Now cut the dough we prepared earlier into about 8 pieces.
  24. Spread some All Purpose Flour on a preparation board.
  25. Flatten each of the dough pieces into sheets using a rolling pin.
  26. Take 3 sheets and spread the Corn Flour thinly on each sheet.
  27. Place each of the 3 sheets on top of each other.
  28. Take a rolling pan and now flatten the 3 sheets that are stacked.
  29. Cut off the edges to make a square shape.
  30. Now we will cut flattened 3 sheets into 4 big squares.
  31. Add the filling to 2 of the squares.
  32. Add a halved boiled Egg.
  33. Now use the other 2 squares to cover and seal the edges with your fingers.
  34. Use a fork and press down on the edges to create a decorative pattern.
  35. Repeat the same process for the rest of the remaining sheets.
  36. Now fry each of the Egg Puffs in Oil.
