Crispy Okra Vade, a spicy fried fritter snack similar to Pakora
This a crispy and spicy fritter made with Okra (called Bandakka in Sinhala) that is very easy to make. It is called Okra Vade (or Ladies Fingers Vade). If you are looking for healthier snacks or to eat more vegetables, this is a great recipe for you.
Ingredients
- Some Okra

2 Banana Peppers that are split in half and then thinly sliced.
- 1 sliced Onion
- 3 thinly sliced Green Chilies
- Some chopped Curry Leaves
- Some chopped Ginger
- Some chopped Garlic Cloves
- 100g of Chickpea Flour
- 50g of All Purpose Flour
- 1.5 tsp of Chili Powder
- Some Turmeric Powder
- Salt
Instructions
- Remove the ends of the Okra.
- Slice the Okra thinly.
- Split 2 Banana Peppers in half.
- Slice the Banana Peppers thinly.
- Add the sliced Okra and Banana Peppers into a bowl.
- Add a sliced Onion.
- Add 3 thinly sliced Green Chilies.
- Add some chopped Curry Leaves.
- Add some chopped Ginger.
- Add some chopped Garlic Cloves.
- Add 100g of Chickpea Flour.
- Add 50g of All Purpose Flour.
- Add 1.5 tsp of Chili Powder.
- Add some Turmeric Powder.
- Add Salt to taste.

Now mix everything together thoroughly by hand.

When the mixture starts to stick together, where you can form a ball, it is the correct consistency.
- Now form ball or patty shapes from the mixture using your hands. This is the Okra Vade.
- Fry each of the Okra Vades.
