Spicy Kos Ata Kalu Pol Curry prepared the traditional way

Sri Lankans love Kalu Pol Curry and today we're making a special version using Kos Ata (Jackfruit Seeds). This Spicy Jackfruit Seeds Roasted Coconut Curry is delicious and great for vegetarians and vegans. This curry is called Roasted Coconut Jackfruit Seeds Curry in English.

Ingredients

  • Some Jackfruit Seeds
  • Handful of Sudu Kekulu Rice
  • 2 crushed Garlic Cloves
  • Handful of grated Coconut
  • 3 dried Chilies broken into smaller pieces by hand
  • 4 Shallots
  • Some Peppercorn
  • Some Mustard Seeds
  • Some Curry Leaves
  • Some Cumin Seeds
  • 2 cups of Coconut Milk
  • Salt
  • 2 tsp of Chili Powder
  • Some Turmeric Powder
  • 1 tbsp of Roasted Curry Powder
  • Some toasted Fenugreek Seeds
  • Piece of Cinnamon
  • 1 sliced Green Chili
  • 2 Garlic Cloves with the Skin
  • 1 thinly sliced Onion
  • Some Pandan Leaves (Rampe)
  • Some Kochchi Chilies
  • Piece of Goraka

Instructions

  1. Wash and boil the Jackfruit Seeds.
  2. after boiling, hit the Jackfruit Seeds lightly with a mallet.
  3. Heat a saucepan on the stove.
  4. Add a handful of Sudu Kekulu Rice.
  5. Add 2 crushed Garlic Cloves.
  6. Add a handful of grated Coconut.
  7. Add 3 dried Chilies broken into smaller pieces by hand.
  8. Add 4 Shallots.
  9. Add some Peppercorn.
  10. Add some Mustard Seeds.
  11. Add some Curry Leaves.
  12. Lightly fry this mixture.
  13. When it is almost done frying, add some Cumin Seeds.
  14. Let this mixture cool down.
  15. Add this mixture to a blender and blend it to a powder.
  16. After blending it, add some Water, and blend it again until you get paste consistency.
  17. Add 2 cups of Coconut Milk to a pot.
  18. Add some Salt.
  19. Add 2 tsp of Chili Powder.
  20. Add some Turmeric Powder.
  21. Add 1 tbsp of Roasted Curry Powder.
  22. Add some toasted Fenugreek Seeds.
  23. Add a piece of Cinnamon.
  24. Add some Curry Leaves.
  25. Add a sliced Green Chili.
  26. Add 2 Garlic Cloves with the skin.
  27. Add a thinly sliced Onion.
  28. Add a Pandan Leaf (Rampe).
  29. Add some Kochchi Chilies.
  30. Add a piece of Goraka.
  31. When this mixture starts boiling, add the Jackfruit Seeds.
  32. Now add the blackened Coconut mixture we made using the blender.
  33. Mix everything together thoroughly.
