How to make a sweet spicy Star Fruit Curry

Star Fruit (also called carambola) has many health benefits including helping control blood sugar. This Star Fruit curry is like a Mango Curry and is very tasty with some rice.

In Sri Lanka, this fruit is called Kabaranka (or Kamaranga). It is packed with fiber, antioxidants, and vitamins like Vitamin C.

Ingredients

  • Some Star Fruits
  • some Fenugreek Seeds
  • 2 tsp of Chili Powder
  • Half a tsp of Pepper
  • 1 tbsp of Roasted Curry Powder
  • Some Turmeric Powder
  • Salt
  • Some Curry Leaves
  • 1 sliced Green Chili
  • 1 Onion sliced
  • 3 crushed Garlic Cloves
  • 1 dried Chili broken into smaller pieces by hand
  • Some Mustard Seeds
  • Some Sugar (optional)

Instructions

  1. Start by washing the Star Fruits.
  2. Remove the edges from the Star Fruits.
  3. Then cut each of the Star Fruits in half and then slice each half at an angle.
  4. Add the Star Fruit pieces into a pot.
  5. Add some Fenugreek Seeds.
  6. Add 2 tsp of Chili Powder.
  7. Add half a tsp of Pepper.
  8. Add 1 tbsp of Roasted Curry Powder.
  9. Add some Turmeric Powder.
  10. Add some Salt.
  11. Add some Curry Leaves.
  12. Add a sliced Green Chili.
  13. Add half a sliced Onion.
  14. Add a small amount of Water.
  15. Heat some Oil in a pot.
  16. Add a thinly sliced half an Onion.
  17. Add 3 crushed Garlic Cloves.
  18. Add a dried Chili broken into smaller pieces by hand.
  19. Add some Mustard Seeds.
  20. Mix thoroughly.
  21. When the mixture is done frying, add the Star Fruit.
  22. Add about half a cup of Water.
  23. Cook over medium heat.
  24. When the color of the Star Fruit changes, you can add Sugar if you want to. It will take about 15 to 20 minutes to finish cooking.
