Authentic Kerala Style Chicken Curry Recipe from South India
A tasty South Indian treat, this authentic Kerala style Chicken Curry. The Chicken Curry develops more flavor when you keep it for at least 1 day. Don't forget to try this with Rice, Biryani, Roti, Naan and Paratha.
Ingredients
For the Masala Mixture
- 2 handfuls of grated Coconut
- 1 tsp of Cumin Seeds
- Handful of White Kekulu Rice
- 3 dried Chilies broken into pieces by hand
- Some Curry Leaves
- Some Peppercorns
- Some Cardamom
- Piece of Cinnamon
- 2 to 3 Cloves
- 2.5 tbsp of Chili Powder
- 2 tbsp of Roasted Curry Powder
- 1 tbsp of Raw Curry Powder
- Some Turmeric Powder
For the Chicken Curry
- 2 sliced Onions
- Some Curry Leaves
- 2 thinly sliced Green Chilies
- A piece of Ginger and 8 Garlic Cloves blended into a paste
- Salt
- 500g of Chicken cut into small pieces
- A sliced Tomato
- Some Pandan Leaves (Rampe)
- Some Fenugreek Seeds
Instructions
For the Masala Mixture
- Heat some Oil in a saucepan over medium heat.
- Add 2 handfuls of grated Coconut.
- When the Coconut is almost toasted, add 1 tsp of Cumin Seeds.
- Add a handful of White Kekulu Rice.
- Add 3 dried Chilies broken into pieces by hand.
- Add some Curry Leaves.
- Add some Peppercorns.
- Add some Cardamom.
- Add a piece of Cinnamon.
- Stir this mixture thoroughly.
- Add 2 to 3 Cloves.
- Add 2.5 tbsp of Chili Powder.
- Add 2 tbsp of Roasted Curry Powder.
- Add 1 tbsp of Raw Curry Powder.
- Add some Turmeric Powder.
- Stir everything together thoroughly.
- Once everything is toasted, take it off the stove.
- Now add the Masala mixture into the blender, add a little bit of Water, and blend it thoroughly.
- Add the Masala mixture into a bowl.

Add 2 and a half cups of Water to the blender to collect any residue and add it into the bowl.
For the Chicken Curry
- Heat up some Oil in a pot.
- Add 2 sliced Onions.
- Add some Curry Leaves.

Add 2 thinly sliced Green Chilies.
- A piece of Ginger and 8 Garlic Cloves blended into a paste.
- Now add the Masala mixture.
- Increase the temperature to high.
- Add Salt to taste.
- Add 500g of Chicken that has been cut into smaller pieces and then washed.

Add a sliced Tomato.
- Add some Pandan Leaves (Rampe).
- Add some Fenugreek Seeds.
- Let the Chicken Curry boil.
- When the Water level has gone down, and the curry is thickened to the consistency you want, turn off the stove.

Let the Chicken Curry cool down, it will develop a lot of flavor then.
