Chicken Tikka Fried Rice Recipe, Indo-Chinese style cuisine

Chicken Tikka is a tasty and popular food in Indian cuisine. Since Sri Lankans love fried rice, we decided to make an Indo-Chinese variation by combing the two to make a restaurant style Chicken Tikka Fried Rice.

We do not add any additives or coloring in this recipe. Everything is made naturally using basic simple ingredients you have at home.

Ingredients

For the Chicken Tikka

  • 500g of boneless Chicken
  • Some Ginger and Garlic blended into a paste
  • Some Turmeric Powder
  • 1 tbsp of Chili Powder
  • 1.5 tbsp of Garam Masala

  • Salt
  • Juice from half a Lemon
  • 2 tsp of Chili Powder

Masala Egg Mixture

  • 2 Eggs
  • Some Garam Masala Powder or Curry Powder
  • Salt

For the Fried Rice

  • Some crushed Garlic
  • Some Garlic Cloves
  • 1 Onion cut into small pieces
  • 1 diced Carrot
  • Some Curry Leaves
  • Some sliced Green Chilies
  • 1 tsp of Pepper
  • Some Chili Powder
  • Salt
  • Half a Banana Pepper diced (optional)
  • Some Green Peas (optional)
  • Some Sweet Corn (optional)
  • Some diced Bell Peppers (optional)
  • Some Turmeric Powder
  • 500g of Cooked Basmati Rice
  • Some sliced Spring Onions

Instructions

For the Chicken Tikka

  1. Wash 500g of boneless Chicken.
  2. Cut the Chicken into small pieces and add into a pot.
  3. Add some Ginger and Garlic Cloves blended into a paste.
  4. Add some Turmeric Powder.
  5. Add 1 tbsp of Chili Powder.
  6. Add 1.5 tbsp of Garam Masala (or half a tablespoon of either Roasted Curry Powder or Raw Curry Powder).
  7. Add Salt to taste.
  8. Add the juice from half a Lemon.
  9. Mix everything together thoroughly.
  10. Fry the Chicken pieces.
  11. Add 1 tsp of Chili Powder into a bowl.
  12. After frying the Chicken, add it into the bowl.
  13. Add another tablespoon of Chili Powder and some Water and mix thoroughly.

For the Masala Egg Mixture

  1. Heat some Oil in a saucepan.
  2. Add 2 Eggs.
  3. Add some Garam Masala Powder or Curry Powder.
  4. Add Salt to taste.
  5. Stir frequently and break apart the Egg into small pieces.
  6. Add this mixture into a bowl and set aside for now.

For the Fried Rice

  1. Heat some Oil in a saucepan.
  2. Add some Ginger and some Garlic Cloves blended into a paste.
  3. Add 1 Onion cut into small pieces.
  4. Add 1 diced Carrot.
  5. Add some Curry Leaves.
  6. Add some sliced Green Chilies.
  7. Add 1 tsp of Pepper.
  8. Add some Chili Powder.
  9. Add Salt to taste.
  10. Add half a Banana Pepper diced (optional).
  11. Add some Green Peas (optional).
  12. Add some Sweet Corn (optional).
  13. Add some diced Bell Peppers (optional).
  14. Add some Turmeric Powder.
  15. Mix thoroughly and cook over medium heat.
  16. Add 500g of Cooked Basmati Rice (or Samba Rice).
  17. Mix everything together thoroughly.
  18. Add the Egg Mixture we prepared earlier and mix thoroughly.
  19. Add some sliced Spring Onions.
  20. Add the Chicken Tikka to the Fried Rice and mix thoroughly.
