How to make a Canned Mackerel Fish Curry

Canned Fish, although affordable, may not always be the best option in terms of health but in this recipe, we are going to show you how to make a Canned Mackerel Fish Curry (in Sri Lanka, this is also known as Tin Fish Curry or Salmon Curry).

The specialty about this Mackerel Curry is how the gravy is thickened so that it is perfect for rice or bread.

Ingredients

For the Masala Mixture

  • Handful of White Kekulu Rice
  • 3 crushed Garlic Cloves
  • 3 dried Whole Chilies broken into pieces by hand
  • Some Mustard Seeds
  • 1 tbsp of Mysore Dhal
  • Some grated Coconut
  • Some Cumin Seeds

For the Curry Mixture

  • 1 tsp Pepper
  • 1 tsp Roasted Curry Powder
  • Some Fenugreek Seeds
  • Some Turmeric Powder
  • 2 tsp of Chili Powder
  • 1.5 tsp of Black Curry Powder
  • Salt
  • 3 pieces of Goraka blended
  • Some Curry Leaves
  • 1 Green Chili sliced into small pieces
  • Some Pandan Leaves (Rampe)
  • Piece of Cinnamon
  • 2 Cardamon and 2 Cloves
  • Some Lemongrass
  • 5 thinly sliced Shallots

For the Fish Curry

  • 1 Canned Fish with the Water or Oil drained.
  • 3 Garlic Cloves
  • Half an Onion cut into small pieces
  • 2 whole Dried Chilies broken into small pieces
  • Some Mustard Seeds
  • Some Curry Leaves
  • 2 tsp of Chili Powder

Instructions

For the Masala Mixture

  1. Heat a saucepan on the stove.
  2. Add a handful of White Kekulu Rice.
  3. Add 3 crushed Garlic Cloves.
  4. Add 3 dried Whole Chilies broken into pieces by hand.
  5. Add some Mustard Seeds.
  6. Add 1 tbsp of Mysore Dhal.
  7. Add some grated Coconut.
  8. Add some Cumin Seeds.
  9. Toast everything.
  10. When it is very aromatic, turn off the stove.
  11. Add the mixture to a blender and blend it.
  12. Add some Water and set it aside for now.

For the Curry Mixture

  1. Add 1 tsp Pepper into a bowl.
  2. Add 1 tsp Roasted Curry Powder.
  3. Add some Fenugreek Seeds.
  4. Add some Turmeric Powder.
  5. Add 2 tsp of Chili Powder.
  6. Add 1.5 tsp of Black Curry Powder.
  7. Add Salt to taste.
  8. Blend 3 pieces of Goraka and add it.
  9. Add some Curry Leaves.
  10. Add a Green Chili cut into small pieces.
  11. Add some Pandan Leaves (Rampe).
  12. Add a piece of Cinnamon.
  13. Add 2 Cardamon and 2 Cloves.
  14. Add some Lemongrass.
  15. Add 5 thinly sliced Shallots.
  16. Now add some Water and set it aside.

Final Steps

  1. Open 1 Canned Fish and drain any Water or Oil.
  2. Fry the Fish Fillets.
  3. Remove any bones from the Fish after frying.
  4. Break the Fish Fillets into wedge size pieces.
  5. Heat some Oil in a pot.
  6. Add 3 Garlic Cloves.
  7. Add half an Onion cut into small pieces.
  8. Add 2 whole Dried Chilies broken into small pieces.
  9. Add some Mustard Seeds.
  10. Add some Curry Leaves.
  11. Sautee everything until it is a golden color.
  12. After sauteing, turn off the stove and add 2 tsp of Chili Powder.
  13. Mix everything together thoroughly.
  14. Now add the Curry mixture and Masala mixture.
  15. Turn on the stove and add wait till the mixture starts boiling.
  16. Now add the fried Mackerel.
  17. Cook for 2 more minutes over medium heat.
