Bakery style Kibula Banis using Oven and Stove top

The fresh smell of this Kibula Banis (Crocodile buns) being baked for breakfast will make anyone hungry. This is a sweet treat for breakfast in the morning or even as a snack for afternoon teatime. The Kibula Banis we're making are just like the ones you get from the bakery and it only requires a few basic ingredients.

We show you how to prepare this sugar coated bread on the stove and in the oven. There is no difference in quality when making it in the oven versus the stove. They are both soft in the middle.

Although it looks like a Croissant or Vienna Roll, Kibula Banis is Sinhalese for Crocodile Buns because they look like crocodiles after baking.

Ingredients

  • 350g of All Purpose Flour
  • 2 tsp of Yeast
  • 5 tbsp of Milk
  • Salt
  • 4 tbsp of Sugar
  • 1 Egg (optional)
  • 1 tsp of Milk Powder (optional)
  • 2 tbsp of Butter

Instructions

Prepare the Kibula Banis

  1. Add 350g of All Purpose Flour to a bowl.
  2. Add 2 tsp of Yeast.
  3. Add 5 tbsp of Milk
  4. Add some Salt
  5. Add 2 tbsp of Sugar
  6. Mix by hand thoroughly.
  7. Optional: Break open and add 1 Egg.
  8. Optional: Add 1 tbsp of Milk Powder to make it tastier.
  9. Add 2 tbsp of Butter
  10. Mix by hand all the ingredients and form a dough.
  11. Now rub some Cooking Oil inside the bowl and around the dough.
  12. Cover the bowl and let the dough rest until it doubles in size. This will take about 1 hour.
  13. After the dough rises, flatten it a bit and then cut it into smaller triangle pieces (like a piece of pie).
  14. Take each triangle piece and flatten it some more and stretch one side of it into a narrow long shape.
  15. Now roll it from the long edge side to form the Kibula Banis shape.
  16. Cover the Kibula Banis and let it rest for about 10 minutes.
  17. In the meantime, heat some Water in a saucepan.
  18. Add 2 tbsp of Sugar.
  19. When all of the Sugar has melted, take it off the stove.
  20. After letting the Kibula Banis rest for 10 mins, rub the Sugar syrup on top of the Kibula Banis.
  21. Now sprinkle some Sugar on top of each Kibula Banis.

For the oven method

  1. Add parchment paper to a baking tray.
  2. Add the Kibula Banis on top of the parchment paper.
  3. Preheat the oven to 180 celsius.
  4. Bake for about 25 minutes.

For the stove top method

  1. Add parchment paper to the bottom of the pan you will be using.
  2. Put this pan inside a bigger pot, put it on the stove, and cover with a lid.
  3. The stove top should be set to low heat.
  4. We must rotate the Kibula Banis frequently to make sure all of the sides are cooked.
