How to make Dolphin Kottu and the difference from Regular Kottu
Almost a National Dish, Kottu is one of the most popular dishes in Sri Lankan Cuisine. Today we are making Dolphin Kottu that is simple to prepare and very tasty.
Ingredients
- 300g of Flour (makes about 12 Paratha Rotis)
- 2 tbsp of Coconut Oil
- Some Ginger
- Several Garlic Cloves
- 1 Egg
- Half a cup of Milk
- 1 shredded Carrot
- 1 sliced Onion
- 1 sliced Banana Pepper
- 2 thinly sliced Green Chilies
- 2 tbsp Chili Flakes
- Some thinly sliced Leeks
- Salt
- 1 tsp Pepper

Instructions
For the Paratha Roti
- Start by adding 300g of Flour into a bowl.
- Add Salt to taste.
- Add 2 tbsp of Coconut Oil.
- Mix everything together.
- While adding Water slowly, mix and form the dough.
- Make sure to mix for at least 7 to 8 minutes, that way we can form a soft dough which is the correct consistency we want.
- After forming the dough, cover and set aside for 8 to 10 minutes.
- After letting the dough rest, rub some Coconut Oil on a preparation board where we will shape the dough.
- Break the dough into smaller round pieces.
- Now take a dough ball, rub some Coconut Oil, and then flatten it thin by hand on the preparation board.
- Now fold the dough into quarters until you get a square shape.
- Flatten the square dough piece again using a rolling pin. Add Flour as you need to prevent sticking.
- Heat some Oil in a saucepan that we will use to toast each of the square pieces which is our Paratha Roti.
- Place the Paratha square piece and toast it and repeat with each of the Paratha pieces.
For the Dolphin Kottu
- Heat some Coconut Oil in a saucepan.
- Under medium heat, add some crushed Ginger and Garlic Cloves blended into a paste.
- When the Garlic Ginger paste is almost fried, break 1 Egg and add it.
- Stir the Egg so that it forms small pieces.
- Add 1 Carrot shredded.
- Add a sliced Onion.
- Add a sliced Banana Pepper.
- Add 2 thinly sliced Green Chilies.
- Add 2 tbsp Chili Flakes.
- Add 1 tsp Pepper.
- While adding these ingredients, stir frequently.
- Add half a cup of Milk.
- Add Salt to taste.
- Now add the Chicken Curry to it.

Add some thinly sliced Leeks.
- Tear the Paratha by hand into medium sized pieces and add it.
- Mix everything together.
