How to make Dolphin Kottu and the difference from Regular Kottu

Almost a National Dish, Kottu is one of the most popular dishes in Sri Lankan Cuisine. Today we are making Dolphin Kottu that is simple to prepare and very tasty.

For the Paratha Roti

  1. Start by adding 300g of Flour into a bowl.
  2. Add Salt to taste.
  3. Add 2 tbsp of Coconut Oil.
  4. Mix everything together.
  5. While adding Water slowly, mix and form the dough.
  6. Make sure to mix for at least 7 to 8 minutes, that way we can form a soft dough which is the correct consistency we want.
  7. After forming the dough, cover and set aside for 8 to 10 minutes.
  8. After letting the dough rest, rub some Coconut Oil on a preparation board where we will shape the dough.
  9. Break the dough into smaller round pieces.
  10. Now take a dough ball, rub some Coconut Oil, and then flatten it thin by hand on the preparation board.
  11. Now fold the dough into quarters until you get a square shape.
  12. Flatten the square dough piece again using a rolling pin. Add Flour as you need to prevent sticking.
  13. Heat some Oil in a saucepan that we will use to toast each of the square pieces which is our Paratha Roti.
  14. Place the Paratha square piece and toast it and repeat with each of the Paratha pieces.

For the Dolphin Kottu

  1. Heat some Coconut Oil in a saucepan.
  2. Under medium heat, add some crushed Ginger and Garlic Cloves blended into a paste.
  3. When the Garlic Ginger paste is almost fried, break 1 Egg and add it.
  4. Stir the Egg so that it forms small pieces.
  5. Add 1 Carrot shredded.
  6. Add a sliced Onion.
  7. Add a sliced Banana Pepper.
  8. Add 2 thinly sliced Green Chilies.
  9. Add 2 tbsp Chili Flakes.
  10. Add 1 tsp Pepper.
  11. While adding these ingredients, stir frequently.
  12. Add half a cup of Milk.
  13. Add Salt to taste.
  14. Now add the Chicken Curry to it.
  15. Add some thinly sliced Leeks.
  16. Tear the Paratha by hand into medium sized pieces and add it.
  17. Mix everything together.
