How to make Happy Cow Cheese that is Soft and Creamy

These cheese wedges make the perfect spread for cream crackers because they are soft and creamy. It tastes just like the real thing and this recipe only requires 3 main ingredients.

Ingredients

  • 1 and a half tsp of Gelatin
  • 1 Liter of Milk
  • 3 tbsp of Vinegar
  • Salt

Instructions

  1. Start by adding 1 and a half tsp of Gelatin to a bowl.
  2. While stirring, add 7 tbsp of Fresh Milk slowly making not to form any clumps in the Gelatin.
  3. Heat 1 liter of Milk in a saucepan under medium heat.
  4. When the Milk is hot, add 1 tbsp of Vinegar and stir.
  5. Keep stirring frequently and keep adding 1 tbsp of Vinegar every 2 to 3 minutes until the Milk starts to curdle.
  6. Once the Milk has curdled, pour it into a cheese cloth and strain it thoroughly.
  7. Wash the curdled Milk inside the cheese cloth several times and squeeze any remaining Water to wash out the Vinegar smell.
  8. Added the curdled Milk to a blender.
  9. Now add the Gelatin mixture to the blender.
  10. Add some Salt.
  11. After blending, you will have a creamy mixture.
  12. Heat this mixture in a saucepan.
  13. Once the mixture starts bubbling and becomes thick, take it off the stove and add it to a bowl.
  14. Let the mixture cool down and put it in the refrigerator for about 6 to 7 hours.
  15. After letting the Cheese set, you can flip the bowl to remove the Cheese from the bowl.
  16. Slice the Cheese into wedges.
