Spicy Homemade Chicken Sausage and Devilled Sausages

Everyone loves eating Sausages so we brought a recipe on how to make Spicy Chicken Sausages at home. You all know that the Sausages we buy from stores have many added preservatives, colorings, and artificial ingredients to preserve them for a long time. Making Sausages at home using clean ingredients is much healthier.

Ingredients

For the Sausages

  • 15 Shallots
  • 5 Green Chilies broken in half
  • 3 crushed Garlic Cloves
  • Handful of Curry Leaves
  • 300g of boneless Chicken
  • 3 tbsp of Oil (recommend using Coconut or Olive Oil)
  • 2 tbsp of Soy Sauce
  • 1 tsp of Pepper
  • 1 tbsp of Chili Flakes
  • 1 tbsp of Curry Powder
  • 1.5 tsp of Chili Powder
  • Salt
  • Some Corn Flour or All Purpose Flour (optional)

For the Sausage Devilled

  • 4 Garlic Cloves
  • 3 Green Chilies sliced at angles
  • 2 sliced Onions
  • 1 Banana Paper sliced at angles
  • 3 small Curry Leaves with the stems
  • Some Pandan Leaves (Rampe)
  • 1 tbsp of Chili Flakes
  • Some Turmeric Powder
  • 1 tsp of Pepper
  • Salt
  • Some Sugar or some Ketchup
  • 1 Tomato sliced into wedges

Instructions

For the Sausages

  1. Add 15 Shallots with the peels removed into a blender.
  2. Add 5 Green Chilies broken in half.
  3. Add 3 crushed Garlic Cloves.
  4. Add a handful of Curry Leaves.
  5. Blend this mixture.
  6. Now add 300g of boneless Chicken.
  7. Add 3 tbsp of Oil.
  8. Add 2 tbsp of Soy Sauce.
  9. Add 1 tsp of Pepper.
  10. Add 1 tbsp of Chili Flakes.
  11. Add 1 tbsp of Curry Powder.
  12. Add 1.5 tsp of Chili Powder.
  13. Add Salt to taste.
  14. Blend this mixture thoroughly into a paste.
  15. Add this mixture into a bowl.
  16. Optional: Add Some Corn Flour or All Purpose Flour
  17. Now scoop some of the mixture into your hand and form the Sausage shape.
  18. Place each Sausage on the edge of some aluminum foil.
  19. Roll the aluminum foil from the edge.
  20. Crimple the ends of the aluminum foil so that the Sausage is sealed inside.
  21. Boil some Water.
  22. Add each of the pieces and keep boiling for about 4 to 5 minutes.
  23. After boiling, add the pieces into a bowl (leave the aluminum foil on).
  24. Let it cool down.
  25. Put it in the freezer for about 2 to 3 hours.

For the Sausage Devilled

  1. Slice the Sausages to the shape you like.
  2. Fry the Sausage slices in some Oil.
  3. After frying, add the slices on top of a tissue paper so any excess Oil is drained.
  4. Heat the same Oil used to fry the Sausages.
  5. Add 4 Garlic Cloves.
  6. Add 3 Green Chilies sliced at angles.
  7. Add 2 sliced Onions.
  8. Add 1 Banana Paper sliced at angles.
  9. Add 3 small Curry Leaves with the stems.
  10. Add Some Pandan Leaves (Rampe).
  11. Add 1 tbsp of Chili Flakes.
  12. Add Some Turmeric Powder.
  13. Add 1 tsp of Pepper.
  14. Add Salt to taste.
  15. Add either some Sugar or some Ketchup.
  16. Stir over medium heat.
  17. Add the fried Sausage slices.
  18. Mix everything together thoroughly.
  19. Add a Tomato sliced into wedges.
  20. Mix everything together thoroughly.
