2 ways of making Chili Paste in just 10 minutes, no MSG

Chili Paste is an important condiment when eating any Rice dish in Sri Lanka. These Sri Lankan Chili Paste recipes are prepared in a healthy way with no preservatives and no MSG. In this recipe, we're making both a wet and dry version of Chili Paste in only 10 minutes.

This Chili Paste would go so well with a fried rice like my Nasi Goreng or Peanut Fried Rice recipes.

Ingredients

For both of the Chili Pastes

  • 50g of small dried Shrimp
  • 50g of Ginger
  • 1 Pods of Garlic
  • 50g Chili Flakes
  • Salt
  • 2 tbsp of Soy Sauce
  • 1 tbsp of Sugar
  • Half a cup of Ketchup
  • 1 tsp of Vinegar (optional)

For the wet Chili Paste

  • 500ml of Coconut Oil

For the dry Chili Paste

  • 5 Shallots
  • Some Curry Leaves
  • 250ml of Coconut Oil

Instructions

Preparation

  1. Wash and clean 50g of small dried Shrimp and then let it dry.
  2. Heat a saucepan.
  3. When the saucepan is hot, turn off the stove.
  4. Heat the dried Shrimp in the saucepan (the stove should be off).
  5. Now add the dried Shrimp into a blender and blend it coarsely.
  6. Add the dried Shrimp into a bowl.
  7. Cut 50g Ginger into small pieces.
  8. Blend the Ginger pieces into a paste.
  9. Blend 1 pod of Garlic into a paste.

For the wet Chili Paste

  1. Heat 250ml of Coconut Oil in a saucepan over medium heat.
  2. Add half of the blended Ginger paste.
  3. Add half of the blended Garlic paste.
  4. Add another 250ml of Coconut Oil.
  5. Keep frying the Ginger and Garlic paste until it turns a golden brown color.
  6. Turn off the stove.
  7. Add 50g Chili Flakes and mix thoroughly.
  8. Now add the 50g of Shrimp and mix thoroughly.
  9. Add Salt to taste.
  10. Add 2 tbsp of Soy Sauce and mix thoroughly.
  11. Add 1 tbsp of Sugar and mix thoroughly.
  12. Add half a cup of Ketchup and keep mixing.
  13. Mix in 1 tsp of Vinegar (optional).

For the dry Chili Paste

  1. Heat 250g of Coconut Oil in a saucepan over medium heat.
  2. Add half of the blended Ginger paste.
  3. Add half of the blended Garlic paste.
  4. Add 5 thinly sliced Shallots.
  5. Add some chopped Curry Leaves.
  6. Stir and fry everything together until it turns a golden color.
  7. Now add the 50g of Shrimp and mix thoroughly.
  8. Turn off the stove.
  9. Add 50g Chili Flakes and mix thoroughly.
  10. Add Salt to taste.
  11. Add 2 tbsp of Soy Sauce and mix thoroughly.
  12. Add 1 tbsp of Sugar and mix thoroughly.
  13. Add half a cup of Ketchup and keep mixing.
  14. Mix in 1 tsp of Vinegar (optional).
