Sri Lankan Seeni Banis, Bakery style Sugar Buns Recipe

Sri Lankan Seeni Banis are soft and sweet tea buns that have a sprinkling of Sugar on top making it a tasty afternoon snack for teatime. The correct way to make this is to knead the dough for more than 15 minutes which will make it very soft and tasty.

Ingredients

  • 200ml of lukewarm Milk
  • 1.5 tsp of Yeast
  • Half a cup of Sugar
  • 300g of All Purpose Flour
  • 1 Egg
  • 1.5 tbsp of Butter
  • Salt
  • 2 tbsp of Milk Powder (optional)

Instructions

  1. Add 100ml of lukewarm Milk into a bowl.
  2. Add 1.5 tsp of Yeast.
  3. Add half a cup of Sugar.
  4. Stir this mixture and then set it aside for 10 minutes.
  5. Add 300g of All Purpose Flour
  6. Add 2 tbsp of Milk Powder (optional).
  7. Mix everything together using a spoon.
  8. Add the remaining 100ml of Milk a little at a time while mixing the dough with your hands.
  9. Keep kneading the dough either by hand or using a beater.
  10. After about 5 minutes of kneading the dough, add 1 Egg and keep kneading.
  11. When the dough is very smooth, add 1.5 tbsp of Butter and keep kneading.
  12. Add some Salt and keep kneading.
  13. When the dough starts to become separated from the bowl, then it is ready.
  14. Now rub some Oil on the inside of the bowl and on the top of the dough.
  15. Cover the bowl and set it aside for about 1 and a half hours to let the dough rise.
  16. After letting the dough rest, press and remove any air pockets from the dough.
  17. Knead the dough for a few minutes.
  18. Now break the dough into 8 smaller pieces.
  19. Shape each piece using your hands into a ball.
  20. Cover a baking tray with parchment paper.
  21. Place each of the dough balls on the baking tray and then flatten slightly using your hands.
  22. Now cover the baking tray with a cloth and let the dough pieces rest for 20 minutes.
  23. Now rub Egg Yolk on top of each Tea Bun.
  24. Sprinkle some Sugar on top of each Tea Bun.
  25. Preheat the oven to 160 celsius.
  26. Bake for about 25 minutes.
