Sri Lankan Seeni Banis, Bakery style Sugar Buns Recipe
Sri Lankan Seeni Banis are soft and sweet tea buns that have a sprinkling of Sugar on top making it a tasty afternoon snack for teatime. The correct way to make this is to knead the dough for more than 15 minutes which will make it very soft and tasty.

Ingredients
- 200ml of lukewarm Milk
- 1.5 tsp of Yeast
- Half a cup of Sugar
- 300g of All Purpose Flour
- 1 Egg
- 1.5 tbsp of Butter
- Salt

2 tbsp of Milk Powder (optional)
Instructions
- Add 100ml of lukewarm Milk into a bowl.
- Add 1.5 tsp of Yeast.
- Add half a cup of Sugar.
- Stir this mixture and then set it aside for 10 minutes.
- Add 300g of All Purpose Flour
- Add 2 tbsp of Milk Powder (optional).
- Mix everything together using a spoon.
- Add the remaining 100ml of Milk a little at a time while mixing the dough with your hands.

Keep kneading the dough either by hand or using a beater.
- After about 5 minutes of kneading the dough, add 1 Egg and keep kneading.
- When the dough is very smooth, add 1.5 tbsp of Butter and keep kneading.
- Add some Salt and keep kneading.
- When the dough starts to become separated from the bowl, then it is ready.
- Now rub some Oil on the inside of the bowl and on the top of the dough.
- Cover the bowl and set it aside for about 1 and a half hours to let the dough rise.
- After letting the dough rest, press and remove any air pockets from the dough.
- Knead the dough for a few minutes.
- Now break the dough into 8 smaller pieces.
- Shape each piece using your hands into a ball.
- Cover a baking tray with parchment paper.
- Place each of the dough balls on the baking tray and then flatten slightly using your hands.

Now cover the baking tray with a cloth and let the dough pieces rest for 20 minutes.
- Now rub Egg Yolk on top of each Tea Bun.
- Sprinkle some Sugar on top of each Tea Bun.
- Preheat the oven to 160 celsius.

Bake for about 25 minutes.
