How to make Lavariya using String Hopper Flour in 2 ways

Lavariya is a traditional Sri Lankan sweet that contains a rich Pol Pani mixture that is wrapped by a soft String Hopper. It is usually eaten for breakfast or afternoon tea. We prepare this Lavariya 2 ways by using String Hopper Flour and Kurakkan Flour.

Although Lavariya is made traditionally from Rice Flour or Wheat Flour, we're making it using String Hopper Flour. Making Lavariya using Rice or Wheat Flour is more labor intensive because the flour needs to be milled more finely and then soaked. Using String Hopper Flour, it is much easier to make because less steps are required.

Ingredients

For the Pol Pani

  • 200g of Sugar
  • Salt
  • Some Cumin Seeds
  • Grated Coconut from 1 Coconut

For the String Hopper Lavariya

  • 350g of String Hopper Flour
  • Salt

For the Kurakkan Lavariya

  • 50g of Kurakkan Flour
  • 150g of String Hopper Flour
  • Salt

Instructions

For the Pol Pani Filling

  1. Heat a saucepan over a medium heat.
  2. Add 3 tbsp of Sugar (we took this from the 200g of Sugar).
  3. When the Sugar starts melting, add 1 cup of Water.
  4. Stir frequently until all of the Sugar has melted.
  5. When the Sugar mixture starts to boil, add the remaining 200g of Sugar.
  6. Stir frequently until all of the Sugar has melted.
  7. When all of the Sugar has melted, turn the stove down to low heat.
  8. Add some Salt.
  9. Add some Cumin Seeds.
  10. Keep stirring frequently.
  11. Add the grated Coconut from 1 Coconut and stir everything together.
  12. Keep stirring and cook until this mixture is thickened so that it has a heavy feel when stirring.

For the String Hopper Lavariya

  1. Add 350g of String Hopper Flour into a bowl.
  2. Add some Salt.
  3. While mixing, add Water a little at a time (make sure it is either boiled Water that is cooled to lukewarm temperature or room temperature Water depending on the String Hopper Flour you used).
  4. Keep mixing until you can shape it into a ball in your hand. That is the consistency you want.

For the Kurakkan Lavariya

  1. Add 50g of Kurakkan Flour through a sieve into a bowl.
  2. Add 150g of String Hopper Flour.
  3. Add some Salt.
  4. While mixing, add Water a little at a time (make sure it is either boiled Water that is cooled to lukewarm temperature or room temperature Water depending on the String Hopper Flour you used).
  5. Keep mixing until you can shape it into a ball in your hand. That is the consistency you want.

Final Steps to make the Lavariya

  1. Rub some Coconut Oil on a Banana Leaf.
  2. Scoop some of the Flour mixture into the String Hopper Maker.
  3. Press into the Banana Leaf in the shape of a large String Hopper.
  4. Now place some of the Pol Pani mixture in the middle of the String Hopper.
  5. Fold the Banana Leaf in half and then press down slightly to seal the Lavariya.
  6. Place each Lavariya on top of the String Hopper steamer trays.
  7. Now place the trays inside the steamer and steam for about 10 minutes.
