How to make Seeni Sambol Roti 2 ways using Wheat and Oat Flour

Seeni Sambol Roti contains a sweet and spicy caramelized Onion Relish that is covered by a soft Roti. This is a tasty afternoon tea snack or makes a quick light breakfast because it is so simple and easy to prepare.

Seeni Sambol comes in either dry or wet forms. We're using the wet form in this recipe which goes perfectly with the soft Roti. To make this Seeni Sambol tastier, we add Sri Lankan spices like Cardamom, Cloves, and Cinnamon along with Maldive Fish (known as Umbalakada which is a dried fish).

The Roti used in this recipe is a soft flatbread that is prepared without adding any yeast. We do not need to let this dough rest and can begin using it immediately. The Oats version of this Roti is very filling so it is great for people trying to lose weight.

This Seeni Sambol Roti is prepared on the stove top so there is no need for an oven. You can use just one saucepan for the entire process.

Ingredients

For the Seeni Sambol

  • 500g of thinly sliced Onions (adjust quantity as you need)
  • 3 crushed Garlic Cloves
  • Some Mustard Seeds
  • Some chopped Curry Leaves
  • 3 sliced Green Chilies
  • Some crushed Cardamom
  • Some crushed Cloves
  • Some crushed Cinnamon
  • Some Maldive Fish
  • 3 tbsp of Chili Flakes
  • 1 tbsp of Roasted Curry Powder
  • Some Turmeric Powder
  • 1 tsp of Pepper
  • Salt
  • 3 tbsp of Chili Powder (adjust to your spice tolerance)
  • 1.5 tbsp of Sugar
  • 2 Tamarind Seeds

For the Wheat Flour Roti

  • 300g of All Purpose Flour
  • 3 tbsp of Coconut Oil
  • Salt

For the Oat Flour Roti

  • 100g of Oats
  • 50g of All Purpose Flour
  • 1.5 tbsp of Coconut Oil
  • Salt

Instructions

For the Wheat Roti

  1. Add 300g of All Purpose Flour into a bowl.
  2. Add 3 tbsp of Coconut Oil.
  3. Add some Salt.
  4. Mix everything together by hand.
  5. Now add lukewarm Water a little at time while mixing and foaming a dough.
  6. Once the dough is formed, rub some Coconut Oil all around the dough.

For the Oats Roti

  1. Toast 100g of Oats in a saucepan.
  2. Blend the toasted Oats into a powder.
  3. Pour the Oats Flour into a bowl.
  4. Add 50g of All Purpose Flour.
  5. Add Salt to taste.
  6. Add 1.5 tbsp of Coconut Oil.
  7. Mix everything together by hand.
  8. Now add lukewarm Water a little at time while mixing and foaming a dough.
  9. Once the dough is formed, rub some Coconut Oil all around the dough.

For the Seeni Sambol

  1. Heat some Oil in a saucepan.
  2. Add a little bit of the thinly sliced Onions.
  3. Add 3 crushed Garlic Cloves.
  4. Add some Mustard Seeds.
  5. Add the remaining 500g of thinly sliced Onions.
  6. Add some chopped Curry Leaves.
  7. Add 3 sliced Green Chilies.
  8. Add some crushed Cardamom.
  9. Add some crushed Cloves.
  10. Add some crushed Cinnamon.
  11. Mix everything together over medium heat.
  12. Add some Maldive Fish.
  13. Add 3 tbsp of Chili Flakes.
  14. Add 1 tbsp of Roasted Curry Powder.
  15. Add some Turmeric Powder.
  16. Add 1 tsp of Pepper.
  17. Add Salt to taste.
  18. Stir everything together and cook for a couple of minutes.
  19. Now add 3 tbsp of Chili Powder.
  20. Add 1.5 tbsp of Sugar.
  21. Stir everything together.
  22. Now add enough Water until the Onions are covered.
  23. Stir everything together and bring it to a light boil.
  24. Add 2 Tamarind Seeds.
  25. While stirring frequently, cook until the Water has evaporated and you have a thick Onion relish.

Final Steps

  1. Separate the dough into smaller pieces.
  2. Add some Flour to a preparation board.
  3. Flatten each dough piece into a Roti (not too thin).
  4. Place the Seeni Sambol in the middle of each Roti.
  5. Fold up and seal the edges of the Roti and make it into a ball shape.
  6. Now flatten the Seeni Sambol Roti a little bit by hand.
  7. Flatten it again with a rolling pin (not too thin or it will break apart).
  8. Heat some Oil in a saucepan over low heat.
  9. Place each of the Seeni Sambol Rotis in the saucepan and cook each side.
