How to make Boondi without adding any artificial colors
Boondi is an Indian Sweet made using Chickpea Flour that has become very popular in Sri Lanka. It comes in many colors and is sold in flea markets. Boondi also comes in a savoury form where it is fried first and then seasonings are added.
We're making Boondi 2 ways, with Wheat Flour and with Chickpea Flour, without adding any artificial colors or preservatives. For the natural coloring, we will use Turmeric Powder for the Yellow color and Beetroot for the Red color. Although we used spices and vegetables for the colorings, it will not taste like them.

Ingredients
For the Boondi using Chickpea Flour (traditional)
- 100g of Chickpea Flour
- Half a tsp of Yeast
- Some Vanilla Extract
- Salt
- 1 Beetroot
- 50g of All Purpose Flour
For the Boondi using Wheat Flour
- 200g of All Purpose Flour
- Half a tsp of Yeast
- Some Vanilla Extract
- Half a tsp of Turmeric Powder
- Salt
For the Sugar Syrup
- 200g of Sugar
- Juice from half a Lemon
Instructions
For the Boondi using Chickpea Flour
- Add 100g of Chickpea Flour into a bowl.
- Add half a tsp of Yeast.
- Add some Vanilla Extract.
- Add Salt to taste.
- Blend 1 Beetroot and then squeeze the juice from the pulp through a sieve into a bowl.
- Add a little bit of the Beetroot Juice and mix thoroughly using a spoon.
- Now add 50g of All Purpose Flour.
- Add a little bit of the Beetroot Juice and mix thoroughly using a spoon.
- Now add lukewarm Water a little at a time while mixing into a paste.

If the paste is not rose colored enough to your liking, add some more Beetroot Juice and mix thoroughly.
For the Boondi using Wheat Flour
- Add 200g of All Purpose Flour into a bowl.
- Add half a tsp of Yeast.
- Add some Vanilla Extract.
- Add half a tsp of Turmeric Powder.
- Add Salt to taste.
- Mix everything together thoroughly using a spoon.
- Add lukewarm Water a little at a time while mixing.

Mix until you get a thick paste consistency.
For the Sugar Syrup
- Heat 1.5 cups of Water in a saucepan over medium heat.
- Add 200g of Sugar.
- Stir frequently until all of the Sugar has melted.
- Once it is boiling and then starts to thicken, turn off the stove.
- Pour the Sugar syrup into a bowl and let it cool down.
- Add the juice from half a lemon and stir.
Final Steps

Scoop the Boondi mixture into a piping bag.
- Carefully squeeze the bag over hot Oil so that lumps of Boondi is added into the Oil.
- After frying, add the Boondi into a bowl.
- Pour the Sugar syrup over the Boondi and mix everything together by hand.
- Set it aside for 5 to 6 minutes so that the Sugar syrup is absorbed by the Boondi.
