How to make Ulundu Vadai in only 10 minutes, 2 easy ways

Ulundu Vadai is a popular snack in Sri Lanka and India. It is made from Urad Dal (black gram) and a mix of herbs and spices. Ulundu Vadai is also called Medu Vadai.

Ulundu Vadai is usually eaten with a sambar or chutney. This is really tasty with a green coconut chutney or sambol.

Although the traditional way of making Ulundu Vadai takes some time due to soaking and blending of the Urad Dal, we show you an easier and quicker way of making it using Ulundu Flour. By using Ulundu Flour, you can make these Vadai in just 10 minutes.

If you don't have Ulundu Flour, we also show you how to make this using All Purpose Flour which is just as tasty.

Ingredients

For the Ulundu Vadai

  • 200g of Ulundu Flour
  • Some chopped Curry Leaves
  • 2 thinly sliced Green Chilies
  • 50g thinly sliced Shallots
  • Salt
  • Some Cumin Seeds
  • 3 to 4 crushed Garlic Cloves
  • Some Pepper
  • 1 tbsp of Coconut Oil

For the All Purpose Flour Vadai

  • 200g of All Purpose Flour
  • Some chopped Curry Leaves
  • 2 thinly sliced Green Chilies
  • 50g thinly sliced Shallots
  • Salt
  • Some Cumin Seeds
  • 4 to 5 crushed Garlic Cloves
  • 1.5 tsp of Pepper (adjust to your taste)
  • Half a tsp of Yeast
  • Some Coconut Oil

Instructions

For the Ulundu Vadai

  1. Add 200g of Ulundu Flour into a bowl.
  2. Add some chopped Curry Leaves.
  3. Add 2 thinly sliced Green Chilies.
  4. Add 50g thinly sliced Shallots.
  5. Add Salt to taste.
  6. Add some Cumin Seeds.
  7. Add 3 to 4 crushed Garlic Cloves.
  8. Now mix everything together thoroughly.
  9. Add some Pepper.
  10. While adding lukewarm Water a little a time, mix until you have a soft dough that is not too runny and not too thick.
  11. Add 1 tbsp of Coconut Oil and keep mixing.
  12. If the dough is too thick, add some more Water, a little at a time, and mix until you have a soft dough.
  13. Let this dough rest for 1 hour.
  14. After 1 hour, this dough will be sticky.
  15. Rub Coconut Oil on your hands and then break pieces of the dough and then form the shape of a Vadai using your hands.
  16. Use your finger to make a hole in the middle of the Vadai.
  17. Deep fry the Vadai over medium heat until it is a golden color.

For the All Purpose Vadai

  1. Add 200g of All Purpose Flour into a bowl.
  2. Add some chopped Curry Leaves.
  3. Add 50g thinly sliced Shallots.
  4. Add 2 thinly sliced Green Chilies.
  5. Add some Cumin Seeds.
  6. Add some Pepper.
  7. Add Salt to taste.
  8. Add 4 to 5 crushed Garlic Cloves.
  9. Add 1.5 tsp of Yeast into a bowl and add some lukewarm Water and stir thoroughly.
  10. Set the Yeast mixture aside for 10 minutes.
  11. Add the Yeast mixture into the Flour mixture.
  12. While adding lukewarm Water a little a time, mix until you have a soft dough that is not too runny and not too thick.
  13. If it is too sticky after mixing, add some more All Purpose Flour and mix thoroughly.
  14. Add a little bit of Coconut Oil on top and set aside for 1 hour for the dough to rise.
  15. Rub Coconut Oil on your hands and then break pieces of the dough and then form the shape of a Vadai using your hands.
  16. Use your finger to make a hole in the middle of the Vadai.
  17. Deep fry the Vadai over medium heat until it is a golden color.
