Adukku Rotti, an tasty Layered Pancake recipe from India

Adukku Rotti is a complete meal that you can make in only 20 minutes and it consist of layers of thin pancakes and filling surrounded by a soft omelette mixture. Although we added Chicken for the filling in this recipe, you can also make this filling without adding Chicken.

Adukki Rotti is popular in the Malabar region of Kerala India and has many names. It is known as Adukku Pathiri (which means layered crepes), Chatti Pathiri, and Chatti Pathil. There are 2 version of Adukku Rotti, both a savory and sweet version. It looks like Lasagna from Italy but instead of Pasta Sheets, it has layers of Pancake.

Ingredients

For the Filling

  • 500g of Chicken (optional)
  • Ginger
  • Garlic
  • 3 Onions
  • Curry Leaves
  • 2 thinly sliced Green Chilies
  • 1 tsp of Chili Flakes
  • Half a tsp of Pepper
  • 1 tsp of Garam Masala Powder
  • Salt
  • Turmeric Powder
  • 1 tsp of Chili Powder

For the Adukku Roti Sheets

  • 250g of All Purpose Flour
  • Salt
  • 1 Egg
  • Turmeric Powder

For the Egg Mixture

  • 120ml of Milk
  • Salt
  • Half a tsp of Pepper
  • 3 Eggs

Instructions

For the Filling

  1. Cut 500g of Chicken into small pieces.
  2. Season the Chicken pieces with Salt and Pepper and set it aside for about 10 minutes.
  3. Blend some Ginger and Garlic together into a paste.
  4. Heat some Oil in a saucepan over medium heat.
  5. Add the seasoned Chicken into the saucepan and cook.
  6. After a couple of minutes of cooking, add the Ginger and Garlic paste.
  7. When the Chicken is fully cooked through, add it into a bowl.
  8. Add some more Oil into the saucepan.
  9. Add 3 chopped Onions.
  10. Add some Curry Leaves.
  11. Add 2 thinly sliced Green Chilies.
  12. Stir this mixture thoroughly.
  13. When the Onions turn translucent in color, add the cooked Chicken.
  14. Add 1 tsp of Chili Flakes.
  15. Add half a tsp of Pepper.
  16. Add 1 tsp of Garam Masala Powder.
  17. Add Salt to taste.
  18. Stir this mixture thoroughly.
  19. Add some Turmeric Powder.
  20. Add 1 tsp of Chili Powder.
  21. Stir this mixture thoroughly.

For the Adukku Roti Sheets

  1. Add 250g of All Purpose Flour into a bowl.
  2. Add Salt to taste.
  3. Add 1 Egg.
  4. Add some Turmeric Powder.
  5. Add Water, a little at a time, while mixing to form a pancake like batter.
  6. Heat some Oil in a saucepan over medium heat.
  7. Pour some of the batter into the saucepan and use a ladle to make it into a circle shape.
  8. Cook 1 side and then take it off the stove.
  9. Repeat using the rest of the batter. You will need 7 to 8 sheets like this.

For the Egg Mixture

  1. Add 120ml of Milk into a bowl.
  2. Add Salt to taste.
  3. Add half a tsp of Pepper.
  4. Add 3 Eggs.
  5. Whisk this mixture together thoroughly.

Final Steps

  1. Rub some Ghee inside of a large pot.
  2. Add 2 of the sheets into the Egg Mixture and then add it into the bottom of the pot.
  3. Add a layer of the Chicken Filling.
  4. Add another sheet into the Egg Mixture and then add it on top of the filling.
  5. Add another layer of the Chicken Filling.
  6. Keep layering until you have about 5 to 6 layers.
  7. For the final layer on top, add 2 sheets.
  8. Pour the remaining Egg mixture into the pot.
  9. Poke and create small holes on the top of the final layer with a toothpick.
  10. Cover the pot with a lid and cook over low heat for about half an hour.
  11. Uncover and then cover the pot with a saucepan and carefully flip into it.
  12. Put the saucepan on the stove with the flipped Adukku Roti and cook over low heat.
