How to make Ala Dosi, simple and easy Potato Dosi Recipe

Ala Dosi is a hard sweet that is made of 2 main ingredients, Potatoes and a Sugar syrup. Many people mistake Ala Dosi for Ala Toffee but they are two different things. Ala Dosi is the same as eating a piece of Jaggery where you can feel the small granular pieces and the ingredients for the toffee are different.

You can keep these Ala Dosi in an airtight container for about a month. This is a great recipe if you are doing a sweets business in Sri Lanka because it takes only a few ingredients and is simple to make.

Total Time: 30 minutes

Ingredients

  • 500g of Potatoes
  • 500g of Sugar
  • Salt
  • Cardamom
  • Cloves
  • Cinnamon
  • Turmeric Powder

Instructions

  1. Peel the Potatoes.
  2. After peeling, add the Potatoes into a bowl of Water to prevent it from discoloring.
  3. Take each Potato and grate it. If you don't have a grater, you can cut it into thin strips.
  4. Add the grated Potatoes into a bowl.
  5. Add Salt.
  6. Mix the Salt and grated Potatoes together thoroughly.
  7. Set this mixture aside for about 2 to 3 minutes.
  8. Once the Salt has extracted the Water from the Potatoes, wash the grated Potatoes.
  9. Squeeze the grated Potatoes to remove any Water and then add the Potatoes into a bowl.
  10. Now heat a saucepan over medium heat.
  11. Add 190ml of Water.
  12. Add 500g of Sugar.
  13. Stir frequently until all of the Sugar has melted.
  14. Add Salt to taste.
  15. Add some crushed Cardamom.
  16. Add some crushed Cloves.
  17. Add some crushed Cinnamon.
  18. Stir thoroughly.
  19. When the mixture starts to bubble and is slightly thickened, add the Potato mixture.
  20. Add some Turmeric Powder.
  21. Stir frequently over medium heat.
  22. When this mixture has thickened to a consistency where it clumps together and you see strands of the Sugar syrup while stirring, take it off the stove.
  23. Rub some Coconut Oil or Butter on a preparation board.
  24. Cover the preparation board with parchment paper.
  25. Rub some Coconut Oil or Butter on the parchment paper.
  26. Pour this mixture into the parchment paper.
  27. Shape it into a square shape.
  28. Using a knife, score lines on top of the mixture.
  29. Now let this mixture cool down and harden.
  30. After hardening, you can break it into pieces from the lines that you scored.
