2 Sesame Seed Recipes, Thala Guli and Thala Toffee

Thala Guli (also known as Thala Bola) is a popular sweet made from Sesame Seeds and Sugar syrup. In this recipe, we also make Thala Toffee by also adding some grated Coconut. Thala Guli or Thala Toffee are perfect for afternoon teatime.

Some people confuse Thala Karali with Thala Guli. The difference is in the shape and the ingredients. Thala Karali resembles a roll shape and is usually wrapped in a toffee wrapper. Thala Karali is also traditionally made from Kotta Pol.

In the olden days, many mom and pop shops would have both Thala Guli and Thala Toffee in big jars which many people loved to eat. These 2 Sesame Seed sweets make a great addition if you're running a sweets business in Sri Lanka.

Ingredients

For the Thala Guli

  • 200g of Sesame Seeds
  • 75g of Sugar
  • 1 tbsp of Butter
  • Salt

For the Thala Toffee

  • 200g of Sesame Seeds
  • 50g of grated Coconut (or desiccated Coconut)
  • 75g of Sugar
  • 80g Rice Flour
  • Salt

Instructions

For the Thala Guli

  1. Toast 200g of Sesame Seeds.
  2. Blend 50g of the toasted Sesame Seeds coarsely.
  3. Add the remaining 150g of toasted Sesame Seeds into a bowl.
  4. Heat 1 tbsp of Sugar in a saucepan over medium heat.
  5. When the Sugar starts turning dark brown, add half a cup of Water.
  6. Add 75g of Sugar.
  7. Stir frequently until all of the Sugar has melted (if you need, you can add a little bit more Water to help melt the Sugar).
  8. Add Salt to taste.
  9. When this Sugar syrup is bubbling, add 150g of the toasted Sesame Seeds. Important: If you think there is too much syrup for the Sesame Seeds, you can remove some of the syrup. If you need, you can add it later.
  10. Turn the heat down to low.
  11. Mix thoroughly.
  12. Add the 50g of blended Sesame Seeds.
  13. Mix thoroughly.
  14. Add 1 tbsp of Butter.
  15. Mix thoroughly until this mixture separates from the bowl and sticks together.
  16. Cover a baking tray with parchment paper.
  17. Using a measuring spoon, scoop the mixture into Thala Guli shapes on top of the parchment paper.
  18. Before the Thala Guli hardens, rub some Coconut Oil on your hands and then round the Thala Guli in your hands.

For the Thala Toffee

  1. Toast 200g of Sesame Seeds.
  2. Add the toasted Sesame Seeds into a bowl.
  3. Toast 50g of grated Coconut (or desiccated Coconut).
  4. Toast 80g of Rice Flour.
  5. Add the toasted Coconut into a separate bowl.
  6. Heat 1 tbsp of Sugar in a saucepan over medium heat.
  7. When the Sugar starts turning dark brown, add half a cup of Water.
  8. Add 75g of Sugar.
  9. Stir frequently until all of the Sugar has melted (if you need, you can add a little bit more Water to help melt the Sugar).
  10. Add Salt to taste.
  11. When this Sugar syrup is bubbling, it is the correct consistency.
  12. Add the toasted Coconut into the bowl of Sesame Seeds.
  13. Add the toasted Rice Flour.
  14. While adding the Sugar Syrup, a little at a time, mix thoroughly and form a thick paste. Important: Only add as much of the Sugar syrup as you need to form the thick paste.
  15. Cover a baking tray with parchment paper.
  16. Pour this mixture into the parchment paper.
  17. Shape it into a large square before the mixture hardens.
  18. Score the mixture (before it hardens) into lines where you will be cutting it.
  19. After the mixture hardens a little, cut it according to the lines you made.
