Achcharu is a traditionally pickled vegetable or fruit condiment that accompanies most meals in Sri Lanka. It is often sweet, sour, and spicy. There are many types of Achcharu and in this recipe, we are making 7 types of Achcharu.

These 7 types of Achcharu are very easy to make and requires only a few basic ingredients. In this recipe, we're making fruit based Achcharu from Lovi, Veralu (Sri Lankan Olives), Pineapple (annasi), Mango, Ambarella, and Guava (pera).

Lovi is very sour so for the Lovi Aacharu, we're going to be soaking it in salted water to reduce the sourness. For the Veralu Aacharu, we're going to be soaking it in salted water to reduce the sourness and discoloration.

Ingredients

Lovi Achcharu

  • Lovi
  • Salt
  • 1 tbsp of Chili Powder
  • 1 tbsp of Sugar

Pani Veralu Achcharu

  • Veralu
  • Salt
  • Pepper
  • 3 tbsp of Sugar
  • 1.5 tbsp of Chili Powder
  • Turmeric Powder
  • Chili Flakes
  • Mustard Paste
  • Vinegar (optional)

Annasi Achcharu

  • Pineapple
  • Turmeric Powder
  • 1 tbsp of Sugar
  • Salt
  • Pepper

Mango Achcharu

  • 2 Mangoes
  • Salt
  • Pepper
  • Chili Powder
  • 1 tbsp of Sugar

Ambarella Achcharu

  • 4 Ambarella
  • Salt
  • Pepper
  • 1 tbsp of Sugar
  • Chili Powder
  • Chili Flakes

Pera Achcharu

  • 1 large Guava
  • 1 tbsp of Chili Powder
  • Salt
  • Pepper
  • 1 tbsp of Sugar

Diwul Achcharu

  • 2 Wood Apples
  • Salt
  • Pepper
  • 1.5 tbsp of Sugar
  • 1 tbsp of Chili Powder
  • Turmeric Powder (optional)

Instructions

Mango Achcharu

  1. Wash and peel 2 Mangos.
  2. Cut the Mangos into strips (not too thick).
  3. Add the Mango strips into a bowl.
  4. Add some Pepper.
  5. Add some Chili Powder.
  6. Add 1 tbsp of Sugar.
  7. Add Salt to taste.
  8. Mix everything together using your hands.

Ambarella Achcharu

  1. Wash and peel 4 Ambarella.
  2. Cut the Ambarella into strips (not too thick).
  3. Add the Ambarella strips (including the seed) into a bowl.
  4. Add some Pepper.
  5. Add Salt to taste.
  6. Add 1 tbsp of Sugar.
  7. Mix everything together using your hands.
  8. Add some Chili Powder.
  9. Add some Chili Flakes.
  10. Mix everything together using your hands.

Annasi Achcharu

  1. Remove the peel from the Pineapple.
  2. Dice the Pineapple into small pieces.
  3. Add the diced Pineapple into a bowl.
  4. Add some Turmeric Powder.
  5. Add 1 tbsp of Sugar.
  6. Add Salt to taste.
  7. Mix everything together using your hands.
  8. Add some Pepper.
  9. Mix everything together using your hands.

Pera Achcharu

  1. Wash 1 large Guava.
  2. Cut the Guava into small pieces.
  3. Add the Guava pieces into a bowl.
  4. Add 1 tbsp of Chili Powder.
  5. Add Salt to taste.
  6. Add 1 tbsp of Sugar.
  7. Add some Pepper.
  8. Mix everything together using your hands.

Lovi Achcharu

  1. Add some Water into a bowl.
  2. Add 2 to 3 tbsp of Salt.
  3. Wash the Lovi.
  4. Cut each of the Lovi in halves.
  5. Lightly crush the Lovi halves.
  6. Add the Lovi into the bowl.
  7. Set it aside to soak for 1 hour.
  8. After 1 hour, wash the Lovi in Water.
  9. Squeeze the Lovi to remove any remaining Water.
  10. Add the Lovi into a bowl.
  11. Add 1 tbsp of Chili Powder.
  12. Add 1 tbsp of Sugar.
  13. Mix everything together using your hands.

Wood Apple Sambol

  1. Grate 2 Wood Apples.
  2. Add Water into a bowl.
  3. Add 2 to 3 tbsp of Salt.
  4. Add the grated Wood Apple into the bowl.
  5. Set it aside to soak for 1 hour.
  6. After 1 hour, wash the Wood Apple.
  7. Squeeze any remaining Water out of the Wood Apple.
  8. Add the Wood Apple into a bowl.
  9. Add some Pepper.
  10. Add 1.5 tbsp of Sugar.
  11. Add 1 tbsp of Chili Powder.
  12. Mix everything together using your hands.
  13. Add some Turmeric Powder (optional) and then mix everything together.

Pani Veralu Achcharu

  1. Add some Water into a bowl.
  2. Add 2 tbsp of Salt.
  3. Lightly crush the Veralu.
  4. Add the Veralu into the bowl.
  5. Set it aside to soak for 1 hour.
  6. Heat a clay pot over medium heat.
  7. Add 1 tbsp of Sugar.
  8. When the Sugar starts turning dark brown, add half a cup of Water.
  9. Add 2 tbsp of Sugar.
  10. When the Sugar has melted, add 1.5 tbsp of Chili Powder.
  11. Add some Turmeric Powder.
  12. Add some Pepper.
  13. Add the Veralu.
  14. Mix everything together.
  15. Cook for a couple of minutes while stirring frequently and then take off the stove.
  16. Let it cool down a little.
  17. Add some Chili Flakes.
  18. Add some Mustard Paste.
  19. Add some Vinegar (optional).
  20. Mix everything together using your hands.
