Easy way of making Wali Thalapa, traditional recipe
Wali Thalapa is a traditional sweet that is made from Rice Flour and a Sugar syrup. Wali Thalapa is incorrectly called Sau Dodol which has different ingredients and texture (Wali Thalapa is a more grainy texture). It is very simple to prepare in half an hour with only 3 main ingredients and is great for afternoon with a ginger tea.
Wali Thalpa is a Sinhala Rasa Kavili (sweet) and is popular for New Years and special occasions.
Total Time: 30 minutes
Ingredients
- 500g of Rice Flour
- 50g of grated Coconut
- Salt
- 600g of Sugar
- Vanilla Extract
- Toasted Cumin Seeds
Instructions
- Add 500g of Rice Flour into a bowl.
- Add 50g of grated Coconut.
- Mix together thoroughly.
- Add Salt to taste.
- While adding lukewarm Water, a little at a time, mix and form small clumps.
- Steam the small clumps for about 6 to 7 minutes.
- Now add these clumps into a bowl.
- Heat 4 tbsp of Sugar in a saucepan over medium heat.
- When the Sugar turns dark brown, add 1 cup of Water and stir.
- When all of the Sugar has melted, take it off the stove.
- Add the Sugar syrup into a large pot over medium heat.
- Add 600g of Sugar.
- Add half a cup of Water.

Stir frequently until all of the Sugar has melted and it is bubbling.
- Now add the Rice Flour clumps into the pot.
- Add some Vanilla Extract.
- Add some toasted Cumin Seeds.
- Mix thoroughly.
- Keep cooking and stirring frequently until you get a thick mixture that sticks together.
- Cover a baking tray with parchment paper.
- Add the Wali Thalapa mixture on top of the parchment paper.
- Cover the Wali Thalapa with a parchment paper.
- Using a rolling pin, flatten and shape the Wali Thalapa into a large square.
- Cut the larger square of Wali Thalapa into medium size squares.
