How to make Sri Lankan Bombai Motai, Seeni Pol Kohu Recipe

Sri Lankan Bombai Motai (also known as Seeni Pol Kohu) is a traditional sweet that is similar to the popular Indian sweet Soan Papdi. It is made from a Sugar syrup and Flour mixture.

This most important thing to remember when making Bombai Motai is to get the correct consistency of the Sugar syrup.

If you want to serve it similar to Soan Papadi, you can add some chopped Pistachios or Almonds into a small bowl and then pack strands of the Bombai Motai tightly into the bowl. Then unmold into a serving plate. If you're going to serve it later, make sure to cover the bowl with a lid to keep it fresh.

Total Time: 2 hours and 30 minutes

Ingredients

  • 2 tbsp of Ghee
  • 60g of Chickpea Flour
  • 80g of All Purpose Flour
  • 600g of Sugar
  • Juice from a wedge of Lemon or Lime

Instructions

  1. Heat 2 tbsp of Ghee in a saucepan over medium heat.
  2. Add 60g of Chickpea Flour.
  3. Add 80g of All Purpose Flour.
  4. Mix everything together.
  5. Toast this mixture until you get a good aroma from it (do not toast it too much).
  6. Let this mixture cool down.
  7. Sieve this mixture into a baking tray and set it aside for now.
  8. Heat 1 cup of Water in a saucepan over medium heat.
  9. Add 600g of Sugar.
  10. Stir frequently until the Sugar syrup is bubbling (do not overcook or undercook it).
  11. Once you have the correct consistency, turn off the stove.
  12. Add the juice from a wedge of Lemon or Lime.
  13. Now slowly stir until you can get a thick workable syrup paste.
  14. Now we need to take this paste and then fold and stretch it many times (do this quickly before it cools down completely).

  15. Now finally fold and stretch the paste and then connect both ends to make a rectangular square (shape of a necklace).
  16. Place this paste on top of the Flour mixture on the baking tray.
  17. Cover the paste with the Flour mixture.
  18. Now fold the paste in half and stretch it again.
  19. Cover with the Flour mixture again.
  20. Keep folding, stretching, and covering with Flour until you have multiple thin strands. It took us about 25 times of folding and stretching it.
