How to make Pasthela, perfect for afternoon tea

Pasthela is a pastry containing a meat or vegetable filling. The idea of Pasthela is using pastry dough and it has many types such as flaky pastries, fried pastries, or pies. This is not to be confused with Vegetable Roti which has a different type of dough and texture. Pasthela makes a great light breakfast or a perfect afternoon teatime snack.

Total Time: 45 minutes

Ingredients

For the Pastry Dough

  • 300g of All Purpose Flour
  • 1 Egg Yolk.
  • Salt
  • 2 tbsp of Butter
  • Coconut Milk (or Regular Milk)

For the Chicken Filling

  • 250g of Chicken
  • 3 small Potatoes
  • Chopped Garlic
  • Chopped Ginger
  • 2 diced Onions
  • 3 thinly sliced Green Chilies
  • Curry Leaves
  • 2 Tamarind Seeds (or a diced Tomato)
  • crushed Cardamom
  • crushed Cloves
  • crushed Cinnamon
  • Chili Flakes
  • Roasted Curry Powder
  • Turmeric Powder
  • Pepper
  • Salt
  • 1 tsp of Chili Powder

Instructions

For the Pastry Dough

  1. Add 300g of All Purpose Flour into a bowl.
  2. Add 1 Egg Yolk.
  3. Add Salt to taste.
  4. Add 2 tbsp of Butter.
  5. Add some Coconut Milk (or Regular Milk), a little at a time, while mixing and forming the dough.
  6. Cover the bowl and set it aside for about 10 minutes let the dough rise.

For the Chicken Filling

  1. Cut 250g of Chicken into small pieces.
  2. Season the Chicken with Salt and Pepper and set it aside for about 10 minutes.
  3. Boil 3 small Potatoes.
  4. After letting the 3 boiled Potatoes cool down, peel them.
  5. Heat some Coconut Oil in a saucepan.
  6. Add the Chicken.
  7. Add some chopped Garlic.
  8. Add some chopped Ginger.
  9. Add 2 diced Onions.
  10. Add 3 thinly sliced Green Chilies.
  11. Add some Curry Leaves.
  12. Add 2 Tamarind Seeds (or a diced Tomato).
  13. Add some crushed Cardamom.
  14. Add some crushed Cloves.
  15. Add some crushed Cinnamon.
  16. Add some Chili Flakes.
  17. Add some Roasted Curry Powder.
  18. Add some Turmeric Powder.
  19. Add some Pepper.
  20. Add Salt to taste.
  21. Mix everything together thoroughly.
  22. Add 1 tsp of Chili Powder.
  23. Mash the 3 boiled Potatoes and then add it.
  24. Mix everything together thoroughly.

Final Steps

  1. After letting the dough rest, break the dough into small pieces.
  2. Add some Flour to a preparation board.
  3. Take each dough piece and flatten it with a rolling pin on top of the preparation board.
  4. Add some of the filling into the middle.
  5. Fold from the edges into a square shape (you can form any shape you want).
  6. Seal the edges with some Egg Yolk.
  7. Rub some Egg Yolk around the Pasthela.
  8. Heat some Oil in a saucepan.
  9. Add the Pasthela and cook each of the sides until it is a golden color (you can even fry these Pasthela instead).
