Maldive Fish Sambol is a mouthwatering condiment for Yellow Rice, Kiri Bath (Milk Rice), and Roast Paan (Sri Lankan Roast Bread). Maldive Fish Sambol prepared this way can be kept for up to 3 months in an dry airtight container. Just be sure to use a clean dry spoon when taking some of it. In Sri Lanka, this makes an excellent gift to send to your neighbors and relatives.

When preparing this, it is important to remove the bottom root part of the onions otherwise it will add a bitterness to the sambol.

Total Time: 10 minutes

Ingredients

  • 1.5 kg of Onions
  • Noodles
  • 1.5 tsp of Coconut Oil
  • 3 Garlic Cloves
  • Half of a Pandan Leaf (Rampe)
  • Curry Leaves
  • 100g of Peanuts
  • 200g of Maldive Fish
  • 3 tbsp of Chili Flakes
  • Half a tsp of Pepper
  • Turmeric Powder
  • Cinnamon
  • Cardamom
  • Cloves
  • 1 tbsp of Chili Powder
  • 5 Tamarind Seeds
  • Salt
  • 1 tbsp of Sugar
  • 1 tbsp of Curry Powder

Instructions

  1. Peel 100g of Peanuts.
  2. Roast 100g of Peanuts.
  3. Wash 200g of Maldive Fish and let it dry.
  4. Peel 1.5 kg of Onions.
  5. Wash the Onions.
  6. Remove the bottom root part of the Onions.
  7. Cut the Onions into halves.
  8. Thinly slice each of the Onion halves.
  9. Fry the Onions over medium heat until it is a golden color.
  10. Add the fried Onions on top of a paper towel to drain any excess Oil.
  11. Fry some Noodles until it is crispy in the same Oil that we used to fry the Onions.
  12. Heat 1.5 tsp of Coconut Oil in a saucepan over medium heat.
  13. Add 3 crushed Garlic Cloves.
  14. Add half a Pandan Leaf broken into small pieces.
  15. Mix thoroughly.
  16. Add some Curry Leaves.
  17. Mix thoroughly.
  18. Turn off the stove.
  19. Add the roasted Peanuts and mix thoroughly.
  20. Add the Maldive Fish.
  21. Turn on the stove to medium heat and then mix thoroughly.
  22. Once the saucepan is heated up, turn off the stove again.
  23. Add 3 tbsp of Chili Flakes.
  24. Add half a tsp of Pepper.
  25. Add some Turmeric Powder.
  26. Add some crushed Cinnamon.
  27. Add some crushed Cardamom.
  28. Add some crushed Cloves.
  29. Add 1 tbsp of Chili Powder.
  30. Add 5 Tamarind Seeds into a bowl with some Water.
  31. Mix and squeeze the Tamarind Seeds to produce Tamarind Juice.
  32. Add the Tamarind Juice into the saucepan.
  33. Add Salt to taste.
  34. Crush the fried Noodles into smaller pieces.
  35. Add the fried Noodles.
  36. Add the fried Onions.
  37. Add 1 tbsp of Sugar.
  38. Turn on the stove to medium heat.
  39. Mix thoroughly.
  40. Add 1 tbsp of Curry Powder.
  41. Mix thoroughly and cook for about 2 minutes.
