Aloo Paratha you can make for breakfast in 15 minutes

Aloo Paratha is a flat bread (like a roti) stuffed with a Potato filling and it originates from Northern India. It is traditionally eaten for breakfast because it is very filling and is quick to made in only 15 minutes.

In India, it is eaten along with Chutney, Butter, Curd, or Pickles. We ate it with a Sri Lankan Chicken Curry.

For Paratha, we need a soft dough so we have to make sure to knead the dough thoroughly for at least 5 minutes.

Ingredients

  • 500g of Wheat (or Atta Flour)
  • 1 Egg
  • Salt
  • 3 tbsp of Coconut Oil
  • 4 Garlic Cloves
  • Ginger
  • 3 Green Chilies
  • Curry Leaves
  • 2 Onions
  • Cardamom
  • Cloves
  • Cinnamon
  • 1 tbsp of Chili Flakes
  • Half a tsp of Pepper
  • Turmeric Powder
  • Half a tsp of Chili Powder
  • Coriander Seeds
  • Cumin Seeds

Instructions

  1. Toast some Coriander Seeds.
  2. Toast some Cumin Seeds.
  3. Blend the toasted Coriander and Cumin Seeds into a powder. Important: We will be using only half a tsp of this powder.
  4. Peel 2 large Potatoes.
  5. Boil the Potatoes.
  6. After letting the Potatoes cool down, mash it into smaller chunks using your hands.
  7. Add 500g of Wheat Flour (or Atta Flour) into a bowl.
  8. Add 1 Egg.
  9. Add Salt to taste.
  10. Add 3 tbsp of Coconut Oil.
  11. Mix thoroughly using your hands.
  12. While adding lukewarm Water, a little at a time, mix thoroughly and form the dough.
  13. Knead this dough for at least 5 minutes.
  14. Now shape the dough into a ball.
  15. Rub some Coconut Oil on the outside of the dough and set it aside while we make the Potato filling.
  16. Heat 1 tbsp of Coconut Oil in a saucepan over medium heat.
  17. Add 4 chopped Garlic Cloves.
  18. Add some chopped Ginger.
  19. Add 3 thinly sliced Green Chilies.
  20. Add some Curry Leaves.
  21. Add 2 sliced Onions.
  22. Add some crushed Cardamom.
  23. Add some crushed Cloves.
  24. Add some crushed Cinnamon.
  25. Add 1 tbsp of Chili Flakes.
  26. Add half a tsp of Pepper.
  27. Add some Turmeric Powder.
  28. Add half a tsp of Chili Powder.
  29. Add half a tsp of the blended Coriander and Cumin Seeds powder.
  30. Mix everything together thoroughly.
  31. Add Salt to taste.
  32. Add the mashed Potatoes.
  33. Mix thoroughly and keep cooking for a couple of minutes and then turn off the stove.
  34. Now take the dough for the Paratha and break it into smaller pieces.
  35. Add some Flour on a preparation board.
  36. Take each of the dough pieces and flatten it into the shape of a Paratha using a rolling pin.
  37. Add some of the Potato filling into the middle of the Paratha.
  38. Now grab the edges of the Paratha and fold up so that the Potato filling is sealed inside.
  39. After folding up from all sides, make sure to seal and remove any additional dough.
  40. Take a rolling pin and flatten the Paratha to the thickness you like.
  41. Heat some Oil in a saucepan over medium heat.
  42. Add the Paratha and cook both sides until it turns a golden color.
  43. When you are serving the Paratha, rub some Butter on the Paratha and then sprinkle some chopped Curry Leaves and Chili Flakes on top of the Paratha.
