Ring Murukku is a spicy crispy snack that is savoury and perfect for teatime. In this recipe, we are making it 2 ways: the traditional way and using All Purpose Flour. These Ring Murukku are very simple to make and are double fried so it has a great crunch.

For the traditional way of making Ring Murukku, it uses a mixture of Rice Flour and Chickpea or Ulundu Flour. Ring Murukku is popular for festive occasions like Diwali.

You can keep these Ring Murukku for 3 to 4 weeks in an airtight container. In Sri Lanka, it is a great option if you're running a snacks business.

Ingredients

Traditional Ring Murukku Dough

  • 100g of Rice Flour
  • 50g of All Purpose Flour
  • 50g of Chickpea Flour

Ring Murukku Dough using All Purpose Flour

  • 200g of All Purpose Flour

Additional Ingredients

  • Cumin Seeds
  • Sesame Seeds
  • 3 tbsp of Chili Powder
  • Turmeric Powder
  • Salt
  • 1 tbsp of Ghee (or Butter)
  • Curry Leaves

Instructions

Traditional Ring Murukku

  1. Lightly toast 100g of Rice Flour in a saucepan over medium heat.
  2. Add the toasted Rice Flour into a bowl.
  3. Lightly toast 50g of All Purpose Flour in a saucepan over medium heat.
  4. Add the toasted All Purpose Flour into the bowl.
  5. Lightly toast 50g of Chickpea Flour in a saucepan over medium heat.
  6. Add the toasted Chickpea Flour into the bowl.
  7. Mix these ingredients together using a spoon.

All Purpose Flour Ring Murukku

  1. Lightly toast 200g of All Purpose Flour in a saucepan over medium heat.
  2. Add the toasted All Purpose Flour into a bowl.

Final Steps

  1. Add some Cumin Seeds into the bowl.
  2. Add some Sesame Seeds.
  3. Mix these ingredients together using a spoon.
  4. Heat 1 cup of Water in a saucepan over medium heat.
  5. Add 2 tbsp of Chili Powder.
  6. Add some Turmeric Powder.
  7. Add Salt to taste.
  8. Stir and then turn down the heat to low.
  9. Add the Flour mixture into the saucepan.
  10. Mix thoroughly.
  11. While mixing halfway through, add one more cup of Water.
  12. Mix until you get a thick mixture that sticks together.
  13. Add this mixture into a bowl.
  14. Let it cool down until you can comfortably mix it.
  15. Mix and form the dough.
  16. Add 1 tbsp of Ghee (or Butter).
  17. Rub some Coconut Oil on your hands.
  18. Mix thoroughly.
  19. Now break the dough into smaller pieces.
  20. Take each piece and shape it into a long roll by rolling it on top of a preparation board.
  21. Now wrap just enough of the roll around your finger to form a ring shape Important: Break off any excess dough and be sure to seal together where the two ends meet.
  22. Make rings for the remaining rolls.
  23. Deep fry each of the rings half way until it is a golden color.
  24. Now add each of the rings into a paper towel to soak any excess Oil.
  25. Deep fry each of the rings again.
  26. Add the fried Ring Murukku into a bowl.
  27. Toast some Curry Leaves in a saucepan.
  28. Add some Chili Powder into the bowl.
  29. Add some Salt.
  30. Add the toasted Curry Leaves.
  31. Mix everything together thoroughly with the Ring Murukku.
