Traditional Bakery Style Ada Recipe without adding Butter

Ada is a traditional sweet from old times that is popular in coastal areas of Sri Lanka. For original Ada, there is no need to add any rising agents other than baking soda and yeast. This recipe is very simple to make and is perfect for afternoon teatime.

In this recipe, we used Kithul Treacle but you can even instead use caramelized Sugar, Coconut Treacle, or melted Jaggery.

Although we added Vanilla Extract, in olden times, they would add Rose Water Essence (called Pinidiya in Sinhala).

For the traditional Ada recipe, we did not add any Butter because our ancestors did not add any.

Prep Time: 12 hours
Cook Time: 30 minutes

Ingredients

  • 2 Eggs
  • 500g of All Purpose Flour
  • 1/3 tsp of Baking Soda
  • 1 tsp of Yeast
  • Thick Coconut Milk from 1 Coconut
  • 150ml of Kithul Treacle
  • Salt
  • 300g of powdered Sugar
  • Vanilla Extract

Instructions

  1. Add 2 Eggs into a bowl.
  2. Whisk the Eggs for about 4 minutes.
  3. Add 500g of All Purpose Flour through a sieve.
  4. Add 1/3 tsp of Baking Soda.
  5. Add 1 tsp of Yeast.
  6. While adding thick Coconut Milk from 1 Coconut, a little at a time, mix and form a thick batter.
  7. Now cover the bowl with a lid and set it aside for 10 to 12 hours.
  8. After 12 hours, add 150ml of Kithul Treacle.
  9. Add Salt to taste.
  10. Add 300g of powdered Sugar.
  11. Mix thoroughly.
  12. Add some Vanilla Extract.
  13. Add a little bit more thick Coconut Milk. Important: This batter must be thick.
  14. Mix thoroughly.
  15. Rub some Coconut Oil on the inside of a cupcake baking tray.
  16. Pour the batter into each of the cupcake molds in the baking tray.
  17. Preheat the oven to 150 celsius.
  18. Bake for about 30 minutes. Important: This time will vary based on your oven.
