Idiyappam Dodol, a traditional sweet made from String Hoppers
String Hoppers Dodol (also known as Idiyappam Dodol) is a traditional sweet made from String Hoppers and was popular in past times. This is a great recipe to try if you have leftover String Hoppers. For this recipe, you can use either String Hoppers made from Rice or Kurakkan Flour.
We do not need to add any Salt to this recipe because the String Hoppers already contain Salt. Although not required, you can improve the taste and texture by adding some chopped nuts such as Peanuts or Cashews when making the Dodol mixture.

Ingredients
- 25 String Hoppers
- 350g of Sugar
- 500ml of Thickened Coconut Milk
- Ground Cloves
- Ground Cardamom
- Ground Cinnamon
- 6 tbsp of Toasted Rice Flour
Instructions
- Break 25 String Hoppers into small pieces.
- Heat 1 tbsp from the 350g of Sugar in a saucepan over medium heat.
- When the Sugar has melted and the mixture is bubbling, add half a cup of Water.
- Now add the remaining Sugar.
- Add 500ml of thickened Coconut Milk.

Stir frequently until all of the Sugar has melted.

Stir frequently until most of the Coconut Milk has evaporated and the mixture has thickened. This will take about 45 minutes.
- Turn the heat down to low.
- Add the String Hoppers.
- Add some ground Cloves.
- Add some ground Cardamom.
- Add some ground Cinnamon.
- Stir everything together thoroughly.
- Add 6 tbsp of Toasted Rice Flour.
- Stir thoroughly.
- Cover a rectangle baking pan with parchment paper.
- Rub some Butter on the parchment paper.
- Pour this mixture into the baking pan and spread evenly.
- Cut it into squares before it cools down so that it is easier.
- For garnish, we placed an Almond on top of each square (optional).
