Alu Eluvang, a type of Traditional Sri Lankan Pancake

Alu Eluvang is a traditional Sri Lankan Pancake from past times that many people do not know about. The way you prepare Alu Eluvang is quite different from the modern Sri Lankan Pancake. For an instance, Alu Eluvang is made using Rice Flour while Sri Lankan Pancake is made from Wheat Flour. Another difference is that Alu Eluvang has 2 separate mixtures (a batter and an Egg mixture) that is poured together when cooking the pancake in a saucepan.

In the olden days, Alu Eluvang was a popular sweet for teatime. If you like pancakes, try my authentic Sri Lankan Pancakes and my traditional breakfast food Kiriwadani recipes.

Total Time: 30 minutes

Ingredients

  • 350g of Rice Flour
  • 275ml of Coconut Milk
  • 1/2 tsp of Yeast
  • 2 Eggs

For the Pani Pol Mixture

  • 100g of Sugar
  • Half a grated Coconut
  • Salt
  • Cumin Seeds

Instructions

  1. Add 350g of Rice Flour into a bowl.
  2. Add Salt to taste.
  3. Add 200ml of Coconut Milk.
  4. Mix and form a Pancake batter Important: If you need to, you can add more Coconut Milk in order to form the batter.
  5. Stir 1/2 a tsp of Yeast in lukewarm Water.
  6. Add the Yeast mixture into the batter.
  7. Stir thoroughly.
  8. Cover the bowl with a lid and set it aside for about an hour to let the batter ferment.
  9. After letting the batter ferment for 1 hour, you can check and stir in more Coconut Milk if it is too thick.
  10. Now whisk 2 Eggs in a bowl.
  11. Add 5 tbsp of Coconut Milk into the Egg mixture and stir thoroughly.
  12. Add Salt to taste.
  13. Rub some Oil in a saucepan and heat it.
  14. Once the saucepan is heated, turn the heat down to low.
  15. Ladle some of the Pancake batter into the saucepan in a circle pattern.
  16. Now ladle the Egg mixture in a circle pattern on top of the Pancake batter that is in the saucepan.
  17. Add some Pani Pol to one side of the pancake.
  18. Fold the pancake in half.
  19. After folding in half and cooking one side, flip and cook the other side.

For the Pani Pol mixture

  1. Heat 2 tbsp of the 100g of Sugar in a saucepan.
  2. When the Sugar starts turning brown, add half a cup of Water.
  3. Add the remaining Sugar.
  4. Add Salt to taste.
  5. When the Sugar mixture starts bubbling, add half a grated Coconut.
  6. Add some Cumin Seeds.
  7. Mix thoroughly.
  8. Keep stirring until it feels heavy to the spoon and then take it off the stove.
