How to make Sri Lankan Handi Kavum the correct way

Handi Kavum is a special variety of Kavum where the batter is mixed by using your hands only and then the batter is deep fried using only a ladle. It is traditionally made for Almsgiving and is made from Rice Flour.

We do not add any Salt when making Handi Kavum. This recipe will yield about 20 Handi Kavum.

Prep Time: 60 minutes
Cook Time: 20 minutes

Ingredients

  • 150g of Wheat Flour
  • 300g of Rice Flour
  • 225g of Sugar
  • Thickened Coconut Milk
  • Fennel Seeds

Instructions

  1. Add 150g of Wheat Flour into a bowl.
  2. Add 300g of Rice Flour into the bowl.
  3. Mix the 2 flours together using your hands.
  4. Add 225g of Sugar into a bowl.
  5. Add thickened Coconut Milk from half of a Coconut.
  6. Mix the Sugar and the Coconut Milk using your hands until the Sugar is lightly melted.
  7. Add the Flour mixture into the Sugar mixture.
  8. Mix thoroughly using your hands.
  9. Heat 2 tbsp of Sugar in a saucepan.
  10. When the Sugar has melted and starts to darken in color, add 5 tbsp of Water and stir to make the Caramel syrup.
  11. Add the Caramel syrup to the Flour mixture, a little at a time, while mixing thoroughly.
  12. If you don't have a slightly runny batter after mixing, add some more Coconut Milk and mix again.
  13. Add some Fennel Seeds and mix thoroughly.
  14. Now cover the bowl and set it aside for 1 hour.
  15. After setting it aside for 1 hour, add some more of Coconut Milk and stir thoroughly.
  16. Heat enough Oil in a small saucepan to deep fry.
  17. Turn the heat down to low.
  18. Slowly ladle some of the Handi Kavum mixture into the saucepan.
  19. Deep fry until the Handi Kavum is golden color.
  20. Flip the Handi Kavum and fry the other side until it is a golden color.
