How to make Modagam, also known as Kozhukkattai, an easy Teatime Sweet

Modagam (also known as Kozhukkattai and Modak) is a popular sweet in both India and Sri Lanka that is made from Rice Flour. In India, it is given as a pūjā for Ganesh Chathurthi meanwhile in Sri Lanka, it is given for Almsgiving. If you are giving this for Almsgiving, we do not add any Salt.

Modagam is very popular in the North Central provinces of Sri Lanka. These Modagam can be fried or steamed.

If you don't have Rice Flour, you can also use String Hopper Flour for this recipe. However, make sure to get the String Hopper Flour variety that must be mixed with hot water. For the Pani Pol filling, if you want, you can substitute Jaggery instead of Sugar.

Total Time: 80 minutes

Ingredients

  • 250g of Rice Flour
  • 150g of Wheat Flour
  • 100g of Sugar
  • Half a grated Coconut
  • Cumin Seeds
  • Chopped Peanuts or Cashews
  • Toasted Sesame Seeds
  • Salt

Instructions

  1. Heat 2 tbsp of the 100g of Sugar in a saucepan.
  2. When the Sugar starts turning brown, add half a cup of Water.
  3. Add the remaining Sugar.
  4. Add Salt to taste.
  5. When the Sugar mixture starts bubbling, add half a grated Coconut.
  6. Add some Cumin Seeds.
  7. Mix thoroughly.
  8. Add some chopped Peanuts or Cashews.
  9. Add some toasted Sesame Seeds.
  10. Mix everything together thoroughly over low heat.
  11. Add some crushed Cardamom.
  12. Add some crushed Nutmeg.
  13. Mix thoroughly.
  14. Steam 250g of Rice Flour for about half an hour.
  15. Add the steamed Rice Flour into a bowl.
  16. Add 150g of Wheat Flour.
  17. Add Salt to taste.
  18. Add Hot Water, a little at a time, while mixing until you get a dough like consistency that does not stick to your hands. It should take about 5 minutes of kneading.
  19. Break the dough into smaller pieces.
  20. Form a dough ball using each piece of dough.
  21. Flatten thin each dough ball using your hands.
  22. Now make indentations on the edges using your fingers so that the edges fold upwards.
  23. Scoop some of the Pani Pol into the inside of the Modagam.
  24. Fold upwards so that the shape of the Modagam looks like a bulb of Garlic.
  25. Steam the Modagam for about half an hour.
