How to make Madu Kavum, an Oil Cake Sweetmeat

Madu Kavum is a traditional sweetmeat that is made from Cycad Flour and is very easy to make in only half an hour.

Cycad Flour is harvested from Cycad Seeds which are available only once a year from the Cycad plant. Turning Cycad Seeds into Flour is a labor intensive process that involves first drying the Cycad Seeds and then soaking it for several days before grinding it into a flour.

Total Time: 30 minutes

Ingredients

  • 100g of Madu Piti (Cycad Seeds Flour)
  • 200g of Rice Flour
  • Toasted Cumin Seeds
  • Toasted Sesame Seeds
  • Toasted Kappi (Broken Rice)
  • 250g of Sugar
  • Salt

Instructions

  1. Heat 2 tbsp of the 250g Sugar in a saucepan.
  2. When the Sugar starts to turn dark, add 1/2 a cup of Water and stir.
  3. Add the rest of the 250g of Sugar and stir.
  4. Add Salt to taste and stir.
  5. Cook until all of the Sugar has melted and you have a thick Caramelized Sugar syrup consistency.
  6. Now add 100g of Madu Piti into a bowl.
  7. Add 200g of Rice Flour.
  8. Add some toasted Cumin Seeds.
  9. Add some toasted Sesame Seeds.
  10. Add some toasted Kappi.
  11. Mix everything together using your hands.
  12. Now add the Caramelized Sugar syrup, a little at a time, while mixing to form a thick soft dough.
  13. Break the dough off into smaller pieces. Important: We need to do this quickly because this dough will start to harden the longer we keep it.
  14. Now rub some Oil on the palm of your hand.
  15. Flatten each piece of dough using the palm of your hand. Important: Do not flatten it too thin.
  16. Heat enough oil in a saucepan for deep frying.
  17. Once the Oil is hot enough, turn the heat down to low.
  18. Fry each of the Madu Kavum.
