How to prepare Polos Mallum Upcountry Style

Polos Mallum is a traditional dish made from chopped Jackfruit that is combined with a Coconut spice and tempered mixture. This recipe is prepared upcountry style where the 3 mixtures are layered first before mixing. This Pollos Mallum is very tasty with Rice and a dried Fish Curry such as Karawala.

Ingredients

  • 1 Young Jackfruit
  • Salt
  • Turmeric Powder

For the Mallum

  • Curry Leaves
  • 3 Green Chilies
  • Nai Miris
  • Coriander Seeds
  • Cumin Seeds
  • 1 tsp of Pepper
  • 1/2 tsp of Mustard Seeds
  • 5 to 6 Garlic Cloves
  • 2 and a half handfuls of grated Coconut
  • Salt
  • Turmeric Powder
  • 10 Shallots

For the Tempered Mixture

  • 4 crushed Garlic Cloves
  • Half a chopped Onion
  • Curry Leaves
  • 1 tsp of Mustard Seeds
  • 5 to 6 Kochchi Miris or 3 dried Chilies

Instructions

  1. Peel 1 Young Jackfruit and then cut it into chunks.
  2. Finely chop the Jackfruit chunks.
  3. Then add the chopped Jackfruit into a pot.
  4. Now add enough Water to cover the Jackfruit in the pot.
  5. Bring the pot to a boil over medium heat.
  6. Then add some Turmeric Powder.
  7. Add Salt to taste. Important: Don't add too much Salt because the Mallum will also contain Salt.
  8. Cover the pot and keep cooking until the Water has evaporated.
  9. Give the Jackfruit mixture a stir.
  10. Now add the Mallum mixture on top.
  11. Then add the Tempered mixture on top.
  12. Cover the pot and cook over medium heat until you get an aromatic smell which should take about 4 to 5 minutes.
  13. Using the handle of a ladle, stir the Jackfruit Mallum. Important: Traditionally, we used the handle of Coconut Ladle.

For the Mallum

  1. Add some Curry Leaves into a blender.
  2. Add 3 Green Chilies broken into smaller pieces by hand.
  3. Add some Nai Miris.
  4. Add 1 tbsp of Coriander Seeds.
  5. Add 1 tsp of Cumin Seeds.
  6. Add 1 tsp of Pepper.
  7. Add 1/2 a tsp of Mustard Seeds.
  8. Add 5 to 6 Garlic Cloves.
  9. Add 1 and a half handfuls of grated Coconut.
  10. Add Salt to taste.
  11. Add some Turmeric Powder.
  12. Add 10 Shallots.
  13. Blend into a thick paste. Important: Do not add any Water.
  14. Add this paste into a bowl.
  15. Mix in a handful of grated Coconut.

For the Tempered Mixture

  1. Heat some Oil in a saucepan over medium heat.
  2. Add 4 crushed Garlic Cloves.
  3. Add half a chopped Onion.
  4. Add some Curry Leaves.
  5. Lightly sauté.
  6. Now add 1 tsp of Mustard Seeds.
  7. Add 5 to 6 Kochchi Miris or 3 dried Chilies.
