Sri Lankan Pani Gotu Recipe from olden times

Pani Gotu is a traditional sweetmeat that is the shape of a cone and filled with a caramelized Sugar syrup. It was a popular sweet in olden times in Sri Lanka however most people today have not heard about it. Pani Gotu is very simple to make in about 25 minutes requiring only a few ingredients.

In this traditional recipe, we combined both Rice and Wheat Flour, however you can also make it using only Wheat Flour. These Pani Gotu can be kept for about 3 weeks in an airtight container.

Total Time: 25 minutes

Ingredients

  • 250g of Rice Flour
  • 100g of All Purpose Flour
  • 250g of Sugar
  • Turmeric Powder
  • Salt
  • Coconut Milk

Instructions

  1. Add 250g of Rice Flour into a bowl.
  2. Add 100g of All Purpose Flour.
  3. Add some Turmeric Powder.
  4. Add Salt to taste.
  5. While adding Coconut Milk, a little at a time, mix and form the dough.
  6. Now dust some All Purpose Flour on a preparation board.
  7. Place the dough on top of the preparation board and flatten thin using a rolling pin so that one side is long. Important: Do not flatten too thinly.
  8. Using a knife, cut the long side edges off so that you are left with a wide thin flattened dough.
  9. Now cut into triangle shapes.
  10. Fold each triangle so that it forms a cone shape.
  11. Deep fry each of the cones.
  12. Let the fried cones cool down a bit.
  13. Deep fry the cones for a second time.
  14. Now melt 3 tbsp of the 250g of Sugar in a saucepan over medium heat.
  15. When the Sugar starts caramelizing, add 1 cup of Water.
  16. Add the remaining Sugar.
  17. Stir frequently until all the Sugar has melted and caramelized.
  18. When the Sugar starts bubbling, it is ready.
  19. Now turn off the stove.
  20. While the Caramelized Sugar syrup is still hot, fill each of the cones.
  21. After letting it cool down for about 5 minutes, the syrup will thicken and the Pani Gotu will be ready to serve.
