Rosh Bora Dessert, a popular sweet from Bengali

Rosh Bora, also known as Rosbora, is a popular sweet in Bengali Cuisine that is basically a soft moist fritter soaked in a sweet Sugar syrup. It looks like Gulab Jamun but it has some differences because it is made from Semolina Flour (Rava or Rulan Flour). You can make this quickly using only a few ingredients and there is no need for the dough to rise. It's a tasty dessert for special occasions.

Ingredients

  • 250g of Semolina Flour
  • 1.5 tbsp of Butter
  • 1/3 tsp of Baking Soda
  • Crushed Cardamom
  • 1 tbsp of Milk Powder (optional)
  • Fresh Milk
  • 1 tbsp of Ghee
  • 150g of Sugar

Instructions

  1. Add 250g of Semolina Flour into a bowl.
  2. Add 1.5 tbsp of Butter.
  3. Add 1/3 tsp of Baking Soda.
  4. Add some crushed Cardamom.
  5. Add 1 tbsp of Milk Powder (optional).
  6. Now add Fresh Milk, a little at a time, while mixing and forming a dough.
  7. Add 1 tbsp of Ghee.
  8. Mix and knead thoroughly until you get a soft dough that is smooth.
  9. Break the dough into smaller pieces.
  10. Roll each of the smaller pieces into a ball.
  11. Now heat a saucepan over medium heat.
  12. Add 150g of Sugar.
  13. Add 1.5 cups of Water.
  14. Stir frequently until all the Sugar has melted.
  15. Add some crushed Cardamom.
  16. Stir frequently until this Sugar syrup is bubbling which should take about 5 minutes.
  17. Once the Sugar syrup is bubbling, turn off the stove.
  18. Place each of the dough balls in your palm and flatten it.
  19. Deep fry each of the flattened dough balls over low heat until it is a golden color.
  20. Add each of the fried Rosh Bora into the Sugar syrup and let it soak up some of the Syrup.
  21. Add the Rosh Bora into a serving plate and pour any remaining Sugar syrup over the it.
  22. Garnish the Rosh Bora with some chopped Pistachios and some Saffron.
