How to Make Athirasa Kawum Recipe that is Soft and Moist

Athirasa Kawum is a sweetmeat (called an Oil Cake) made from Rice Flour that is popular for Sri Lankan New Year. It is an important part of the New Years Rasa Kavili table. The reason it is called Athirasa is because you get the shape and tastiness from making it using your hands.

Total Time: 30 minutes

Ingredients

  • 100g of Sugar
  • 250g of Rice Flour
  • Toasted Sesame Seeds
  • Toasted Broken Rice
  • Toasted Cumin Seeds

Instructions

  1. Heat 1.5 tbsp of the 100g of Sugar in a saucepan over medium heat.
  2. When the Sugar starts to caramelize, add 1 cup of Water, a little at a time.
  3. Give it a stir.
  4. Now add the remaining Sugar.
  5. Stir frequently until most of the Sugar has melted.
  6. Now turn off the stove.
  7. Add Salt to taste.
  8. Give it a stir and let this Caramelized Sugar syrup cool down.
  9. Split this Caramelized Sugar syrup into 2 equal portions.
  10. Now add 250g of Rice Flour into the saucepan you used to make the Caramelized Sugar syrup.
  11. Add some toasted Sesame Seeds.
  12. Add some toasted Broken Rice.
  13. Add some toasted Cumin Seeds.
  14. Mix these ingredients together.
  15. Using your hands mix and form the dough while adding 1 portion of the Caramelized Sugar syrup, a little at a time. If you need, you can add the second portion of the Caramelized Sugar syrup to form the batter, a little at a time.
  16. Knead the dough for about 5 minutes.
  17. Now put the dough into a preparation board.
  18. Now break pieces of the dough and roll into a ball.
  19. Take each dough ball and flatten it in your palm making sure to rub some Oil on your palm first.
  20. Deep fry each of the Athirasa Kawum over low heat until it is a golden color.
