Coconut Ice Recipe using only 4 ingredients in 10 minutes

Coconut Ice is a sweet made from desiccated Coconut that originated from Britain and is popular in Australia and South Africa. It has a very chewy and milky texture. In this recipe, we make it from grated Coconut. Coconut Ice is like Sri Lankan Pol Topi (Coconut Toffee) with the only difference being that Pol Topi uses a Caramelized Sugar syrup. This is a no bake no cook recipe.

In this recipe, we added Rose colored Food coloring for the second layer. If you want to use natural ingredients, you can grated a raw Beetroot and then blend it with a little bit of Water. Extract the juice of the puree using a strainer which you can use for the coloring.

Total Time: 10 minutes

Ingredients

  • 350g of grated Coconut
  • 200g of Condensed Milk
  • 150g of Powdered Sugar
  • Vanilla Extract
  • Salt

Instructions

  1. Add 350g of grated Coconut into a saucepan.
  2. Toast over low heat, while stirring frequently, until the Coconut turns completely dry.
  3. Add 200g of Condensed Milk into a bowl.
  4. Then add the dried Coconut into the bowl.
  5. Now add 150g of Powdered Sugar.
  6. Add some Vanilla Extract.
  7. Add Salt to taste.
  8. Mix these ingredients together thoroughly until you get a mixture that can be clumped together.
  9. Cover a baking tray with parchment paper.
  10. Pour half of the Coconut mixture into the baking tray and spread evenly with a spatula making sure to pack the mixture in tightly.
  11. Add a bit of Food Coloring to the remaining portion and mix thoroughly.
  12. Pour the remaining half of the Coconut mixture into the baking pan on top of the first portion and spread evenly with a spatula making sure to pack the mixture in tightly.
  13. Remove from the baking tray and cut into squares.
