How to make authentic Sri Lankan Curry Powder is one of the recipes many people have been asking me for. The secret of many tasty Sri Lankan Meals is the Curry Powder that was used. With this recipe, you are using natural ingredients and you no longer have to buy Curry Powder from the store. This recipe will yield about 300g of Curry Powder.

When making this Curry Powder, you want to be sure to wash and dry the ingredients so that any impurities are removed. It is preferable to dry them in the sun. When you buy these ingredients for this Curry Powder, try to buy the freshest kind.

Now that you know how to make authentic traditional Sri Lankan Curry Powder, you can use it to make other tasty recipes like my Sri Lankan Fried Chicken Curry and Kidu Rice Set Menu recipes.

Ingredients

  • 100g of Coriander Seeds
  • 10g of Dried Whole Chilies
  • Piece of Dried Ginger
  • Piece of Dried Turmeric
  • 5g of Peppercorns
  • 10g of Green Gram
  • 5g of Nadu Rice (you can use any variety of Rice but my Mom believes that Nadu Rice is the tastiest)
  • 5g of Masoor Dhal
  • Piece of Dried Nutmeg
  • Piece of Dried Mace
  • Piece of Cinnamon
  • 2 Garlic Cloves
  • 2 Shallots
  • 5g of Cardamom
  • 5g of Cloves
  • Chopped piece of Lemongrass
  • Curry Leaves preferably with the stems
  • Pandan Leaves
  • 5g of Fennel Seeds
  • 5g of Cumin Seeds
  • 5g of Fenugreek Seeds
  • 1 tsp of Mustard Seeds

Instructions

  1. Start by washing the ingredients and then letting them dry (preferably in the Sun).
  2. Add 100g of Coriander Seeds into a saucepan.
  3. Add 10g of Dried Whole Chilies.
  4. Add a piece of dried Ginger.
  5. Add a piece of dried Turmeric.
  6. Add 5g of Peppercorns.
  7. Add 10g of Green Gram.
  8. Add 5g of Nadu Rice.
  9. Add 5g of Masoor Dhal.
  10. Add a piece of dried Nutmeg.
  11. Add a piece of dried Mace.
  12. Add a piece of Cinnamon.
  13. Add 2 Garlic Cloves.
  14. Add 2 Shallots.
  15. Add 5g of Cardamom.
  16. Add 5g of Cloves.
  17. Mix these ingredients together using your hands.
  18. Add a chopped piece of Lemongrass.
  19. Add some Curry Leaves preferably with the stems.
  20. Add some Pandan Leaves.
  21. Turn on the stove to low heat.
  22. Stir frequently.
  23. About 5 minutes before this mixture is finished toasting, add 5g of Fennel Seeds.
  24. Add 5g of Cumin Seeds.
  25. Add 5g of Fenugreek Seeds.
  26. Add 1 tsp of Mustard Seeds.
  27. Stir frequently until the mixture is toasted thoroughly under low heat (be sure not to burn the mixture).
  28. Once the mixture is toasted, add the mixture into a blender.
  29. Blend into a finely ground Curry Powder.
  30. Store this Curry Powder in an airtight container.
