How to make Kokis without using Eggs or Wheat Flour
Kokis is a traditional crispy and crunchy sweetmeat made from Rice Flour for special occasions like Sri Lankan New Years. Traditional Kokis does not require adding Wheat Flour or Eggs and it is prepared only with Rice Flour. Kokis has a golden color and to achieve that, we add a small amount of Turmeric Powder which will bring out the color when frying.
Kokis prepared according to this recipe can be kept for up to 1 month. Make sure to keep in an airtight container. This recipe will yield about 37 Kokis.
To make Kokis, you need a special frying spoon called a "Kokis Achchu" which has a wheel like shape. The wheel part of the spoon is dipped in the Kokis batter and then in hot frying Oil so that the batter will take the shape of the mold.

Ingredients
- Coconut Milk from 1 grated Coconut
- Salt
- Turmeric Powder
- 250g of Rice Flour
- Thinly chopped Curry Leaves
Instructions
- Add the Coconut Milk from 1 grated Coconut into a bowl.
- Add Salt to taste.
- Add a small amount of Turmeric Powder.
- Add 125g of Rice Flour.
- Add thinly chopped Curry Leaves.
- Give this mixture a stir.
- Add 125g of Rice Flour.
- Stir thoroughly
- Now stir using your hands to make sure there are no clumps left and you are left with a batter that is not too thick and not too runny.
- Now add Oil into a saucepan for deep frying.
- Place the Kokis spoon inside the saucepan and bring the Oil up to temperature over low heat.
- When the Oil is hot enough for frying, dip the Kokis spoon in the batter.
- Now place the spoon in the hot Oil and after a minute of frying, the Kokis should disconnect from the spoon.
- Fry both sides of the Kokis until it is a golden color.
