Pani Kaju is a hard and crunchy sweet that is made from Peanuts and syrup and it is a favorite amongst old and young people in Sri Lanka. You only need 3 ingredients to make this. This is similar to Peanut Brittle and Peanut Praline.

Using this recipe, you can make about 40 Pani Kaju. If you store this in an airtight container, you can keep these Pani Kaju for about 3 to 4 weeks.

Total Time: 30 minutes

Ingredients

  • 200g of Sugar
  • 350g of Peanuts
  • 1.5 tbsp of Butter
  • Salt

Instructions

  1. Heat 1 tbsp from the 200g of Sugar in a saucepan over medium heat.
  2. When the Sugar starts to caramelize, add 1 cup of Water.
  3. Give this mixture a stir.
  4. Add the remaining Sugar.
  5. Stir frequently until you have a syrup that is bubbling.
  6. Now add Salt to taste.
  7. Keep cooking until you have a syrup consistency.
  8. Now add 350g of Peanuts.
  9. Stir this mixture thoroughly.
  10. Reduce the temperature to low.
  11. Now add 1.5 tbsp of Butter.
  12. Mix thoroughly over low heat.
  13. Cover a baking tray with parchment paper.
  14. When the Peanut mixture starts separating from the saucepan when stirring, take it off the stove.
  15. Pour the Peanut mixture into the baking tray and spread evenly before it cools down.
  16. Cut it into squares before the mixture cools down.
