Mung Kavum is a traditional sweetmeat with a crispy outer shell made from Rice Flour and a sweet filling made from Green Gram Flour. Mung Kavum is an important part of the sweetmeats table (avurudu kavili) for Sri Lankan New Years. In this recipe, we make Mung Kavum 3 different shapes.

This recipe will yield about 50 Mung Kavum. If you are making Green Gram Flour, be sure to wash the Green Gram first, let it dry, and then toast it. Then grind it coarsely into a Flour. Although we added Caramelized Sugar, you can instead add things like Kithul Treacle and Pol Pani if you want.

Total Time: 30 minutes

Ingredients

  • 500g of Sugar
  • 350g of coarse Green Gram Flour
  • 425g of Rice Flour
  • Salt
  • Turmeric Powder
  • Thick Coconut Milk

Instructions

  1. Heat 2 tbsp from 500g of Sugar in a saucepan over medium heat.
  2. When the Sugar starts to caramelize, add 1.5 cups of Water.
  3. Add the remaining Sugar.
  4. Stir frequently until you get a syrup like consistency.
  5. Now turn off the stove and let the Caramelized Sugar syrup cool down.
  6. Add 350g of coarse Green Gram Flour into a bowl.
  7. Add 125g of Rice Flour.
  8. Mix these 2 ingredients together using your hands.
  9. Add Salt to taste.
  10. While adding the Caramelized Sugar syrup, a little at a time, mix and form the Kavum mixture until you can pack and form clumps from the mixture in your hands.
  11. Now add 300g of Rice Flour into a bowl.
  12. Add some Salt.
  13. Add a small amount of Turmeric Powder.
  14. Now add thick Coconut Milk, while mixing, and forming a batter which is not too runny and not too thick.
  15. Heat Oil for deep frying in a saucepan over medium heat.
  16. Once the Oil is hot, dip each Kavum in the batter and deep fry until it is a golden color.

Long Mung Kavum Shape

  1. Take some of the Kavum mixture into your hands and roll it into a cylinder shape.
  2. Flatten the cylinder shaped Kavum mixture.

Round Mung Kavum Shape

  1. Take some of the Kavum mixture into your hands and roll it into a ball.
  2. Flatten the ball into a circle shape.

Traditional Mung Kavum Shape

  1. Pour the Mung Kavum mixture into a preparation board.
  2. Shape the Mung Kavum mixture into a square.
  3. Now cut into long thick strips.
  4. Then cut each strips into smaller pieces at an angle.
