Perfect Diya Bath Recipe to cool down from Hot Weather
Diya Bath is a fermented Rice that is eaten for many health benefits in Sri Lanka. Our ancestors ate Diya Bath to help cool down the body from hot weather, for gastritis, and other ailments. This Diya Bath contains Green Chili, Shallots, Lemon Juice, and Whole Chilies so it's full of antioxidants.

Cook Time: 5 minutes
Ingredients
- 1.5 cups of leftover Rice
- Thinly sliced Green Chili
- Shallots
- Half a cup of Coconut Milk
- Juice from 1 Lemon
- Salt
- 6 dried Whole Chilies
Instructions
- Add 1.5 cups of leftover cooked Rice into a pot.
- Add enough Water until the Rice is covered.
- Cover the pot and set it aside to ferment overnight for at least 12 hours.
- Lightly smash the Rice with a spoon.
- Add a thinly sliced Green Chili.
- Add several thinly sliced Shallots.
- Add half a cup of Coconut Milk.
- Give this mixture a stir.
- Add Salt to taste.
- Add the juice from 1 Lemon.
- Give this mixture a stir.
- Using the cooktop, char 6 dried whole Chilies.
- Break the charred whole Chilies into smaller pieces by hand.
- Add the Chilies into the Diya Bath and give it a stir.
