Kurakkan Thalapa with Horse Gram Curry Recipe

Kurakkan Thalapa is a ball of dough made from Kurakkan Flour that Sri Lankan farmers and villagers used to eat for strength and energy that would sustain them all day. This Kurakkan Thalapa is tasty with a Fish or Taro Leaves Curry and especially with the Horse Gram Curry we will make in this recipe. To serve the Horse Gram Curry (called Kollu Maaluwa in Sinhala), pour it over the Kurakkan Thalapa after placing it in a plate.

Ingredients

For the Kurakkan Thalapa

  • 400g of Kurakkan Flour
  • Salt

For the Horse Gram Curry

  • 250g of Horse Gram
  • 1.5 tbsp of Chili Powder
  • 1 tbsp of Roasted Curry Powder
  • 1 tsp of Pepper
  • Turmeric Powder
  • 1 tsp of toasted Fenugreek Seeds
  • Pandan Leaves
  • Curry Leaves
  • Onion
  • Sliced Green Chili
  • 3 crushed Garlic Cloves
  • Curry Leaves
  • 2 dried whole Chilies
  • Mustard Seeds
  • Turmeric Powder
  • 1 tsp of Chili Powder
  • 2 Tamarind Seeds
  • Salt

Instructions

Kurakkan Thalapa

  1. Add 400g of Kurakkan Flour into a pot.
  2. Add Salt to taste.
  3. While adding lukewarm Water, stir and mix thoroughly.
  4. Using your hands, stir thoroughly again to remove any clumps.
  5. Turn on the stove to low heat and cook making sure to stir slowly without stopping.
  6. Keep stirring and cooking until it is thickened. If you rub some Water on your hand and then touch the Kurakkan Thalapa, if it doesn't stick to your hand, then it is the correct consistency.
  7. Let the Kurakkan Thalapa mixture cool down for a bit.
  8. Break off pieces of the Kurakkan Thalapa and roll into a ball.

Horse Gram Curry

  1. Wash and clean 250g of Horse Gram.
  2. After letting it dry, lightly toast the Horse Gram in a saucepan over low heat.
  3. Add the toasted Horse Gram into a blender and blend.
  4. Add the blended Horse Gram into a bowl of Water and remove the outer shell.
  5. Add the Horse Gram into a new bowl and add enough Water to cover everything.
  6. Set it aside and leave it soak overnight.
  7. Add the Horse Gram with the Water into a blender and blend into a paste.
  8. Pour the paste into a bowl.
  9. Add 1 cup of Water into the blender to collect any residue and then pour that Water into the bowl.
  10. Add 1.5 tbsp of Chili Powder into the bowl.
  11. Add 1 tbsp of Roasted Curry Powder.
  12. Add 1 tsp of Pepper.
  13. Add some Turmeric Powder.
  14. Add 1 tsp of toasted Fenugreek Seeds.
  15. Add a few pieces of Pandan Leaves.
  16. Add some Curry Leaves.
  17. Add a chopped Onion.
  18. Add a sliced Green Chili.
  19. Mix thoroughly and set this mixture aside for now.
  20. Heat some Oil in a saucepan over medium heat.
  21. Add half a chopped Onion.
  22. Add 3 crushed Garlic Cloves.
  23. Add some Curry Leaves.
  24. Add 2 dried whole Chilies broken into smaller pieces by hand.
  25. Add some Mustard Seeds.
  26. Fry these ingredients together until they are a golden color.
  27. Turn off the stove.
  28. Add some Turmeric Powder.
  29. Add 1 tsp of Chili Powder.
  30. Mix thoroughly.
  31. Now pour the Horse Gram mixture we set aside.
  32. Turn the stove back on to medium heat.
  33. After cooking for a couple of minutes, add 2 Tamarind Seeds.
  34. Add Salt to taste.
  35. Stir frequently and cook until it is thickened.
