2 ways of making Keera Wade - Traditional and Modern

Most people have tried many types of Vada such Parripu Vada, Masala Vada, and Ulundu Vada but many have not heard about or tried Keera Vada. Keera Vada is a special Vada made by adding leafy greens such as Spinach, Mukunuwenna, and Kangkung (Water Spinach). Whether you spell it Vade, Vada, Wade, or Wadei, this recipe makes a great snack for afternoon teatime. Using this recipe, you can make about 12 Keera Vada.

The differences between Modern and Traditional Keera Vada is that traditional Keera Vada uses Urad Flour (White Lentil Flour). If you're making traditional Keera Vada, you can add a pinch of Asafoetida powder to improve the nutritional value.

Ingredients

Modern style Keera Vada

  • 250g of Split Chickpeas (Chana Dal)
  • Shredded Carrots
  • Shredded Leeks
  • Thinly sliced Green Beans
  • Thinly sliced raw peeled Potato
  • 2 sliced Green Chilies
  • Chopped Kangkung
  • 1 tsp of Cumin Seeds
  • 1 tsp of Pepper
  • Salt
  • Chopped Onion
  • Curry Leaves
  • 2 chopped Garlic Cloves
  • 1 tbsp of Chili Flakes
  • 50g of Wheat Flour

Traditional Keera Vada

  • 300g of Urad Flour
  • Sliced Green Chili
  • Chopped Onion
  • 2 chopped Garlic Cloves
  • Curry Leaves
  • Spinach
  • 1 tbsp of Chili Flakes
  • Salt
  • 1 tsp of Pepper
  • Half a teaspoon of Cumin Seeds

Instructions

Modern style Keera Vada

  1. Soak 250g of Split Chickpeas (Chana Dal) for 5 hours in a bowl of Water.
  2. Drain the Water and then add half of the Chickpeas into a blender.
  3. Blender finely and then add it into a bowl.
  4. Now add the remaining half into the blender.
  5. Blend coarsely so there are some chunks left and then add it into the bowl.
  6. Add some shredded Carrots.
  7. Add some shredded Leeks.
  8. Add some thinly sliced Green Beans.
  9. Add some thinly sliced raw peeled Potato.
  10. Add 2 sliced Green Chilies.
  11. Add some chopped Kangkung.
  12. Add 1 tsp of Cumin Seeds.
  13. Add 1 tsp of Pepper.
  14. Add Salt to taste.
  15. Add a chopped Onion.
  16. Add some Curry Leaves.
  17. Add 2 chopped Garlic Cloves.
  18. Add 1 tbsp of Chili Flakes.
  19. Mix all these ingredients together using your hands.
  20. Now add 50g of All Purpose Flour.
  21. Mix together using your hands.
  22. Scoop some of the mixture into your hands and then flatten it into the Vada shape.
  23. Deep fry both sides over low heat until golden colored.

Traditional Keera Vada

  1. Add 300g of Urad Flour into a bowl.
  2. Add a sliced Green Chili.
  3. Add a chopped Onion.
  4. Add 2 chopped Garlic Cloves.
  5. Add some Curry Leaves.
  6. Add some Spinach.
  7. Add 1 tbsp of Chili Flakes.
  8. Add Salt to taste.
  9. Add 1 tsp of Pepper.
  10. Add half a teaspoon of Cumin Seeds.
  11. Mix all these ingredients together using your hands.
  12. Add lukewarm Water, a little at a time, while mixing and forming a thick paste.
  13. Set this mixture aside for half an hour.
  14. Rub some Water on your hands.
  15. Scoop some of the mixture into your hand and then poke a hole in the middle of the mixture using your finger.
  16. Shape the mixture into the Vada shape.
  17. Deep fry both sides over low heat until golden colored.
