Sri Lankan Traditional Egg Rice Menu with Side Dishes

In this Sri Lankan recipe, we will guide you through preparing a wholesome and authentic meal that showcases the rich flavors of our island. Our menu includes a delightful Egg Rice, a tantalizing Pineapple Curry bursting with taste, a fiery Devilled Soya Meat for spice lovers, and a flavorful Devilled Kangkung stir fry.

This delectable meal is ideal for hosting guests or making any occasion truly special. Experience the true essence of Sri Lankan cuisine with this complete meal.

Some people are allergic to Pineapple so if you are, a good substitute is a Mango or Ambarella Curry. Other side dishes that pair well with this meal include an Ash Plantain Curry, Cutlets, and a Pepper Chicken Fry.

Ingredients

Pineapple Curry

  • Half ripened Pineapple
  • Toasted Fenugreek Seeds
  • Chili Powder
  • Turmeric Powder
  • Half a teaspoon of Pepper
  • 1 tbsp of Roasted Curry Powder
  • Cardamom
  • Cloves
  • Piece of Cinnamon
  • Chopped Onion
  • Curry Leaves
  • Sliced Green Chili
  • Piece of Pandan Leaf
  • 2 Garlic Cloves
  • Mustard Seeds
  • 1 tbsp of Sugar

Devilled Soya Meat

  • Soya Meat
  • Salt
  • 2 Garlic Cloves
  • Half a chopped Onion
  • Pandan Leaves
  • Curry Leaves
  • 2 Green Chilies
  • 3 Onions
  • 1 tbsp of Chili Flakes
  • Turmeric Powder
  • Tomato Sauce
  • 2 sliced Tomatoes

Egg Rice

  • 500g of Samba Rice
  • Piece of Cinnamon
  • 4 Cloves
  • 4 Cardamom
  • Peppercorns
  • 3 Eggs
  • Pepper
  • Salt
  • 1.5 tbsp of Ghee
  • Fried Onions

Devilled Kangkung

  • Kangkung
  • 3 Garlic Cloves
  • Chopped Onion
  • 2 sliced Green Chilies
  • Piece of Pandan Leaf
  • Curry Leaves
  • 1 tbsp of Chili Powder
  • Turmeric Powder
  • Half a teaspoon of Pepper
  • Salt
  • 2 diced Tomatoes
  • 2 tbsp of Soy Sauce
  • 1 tsp of Sugar

Instructions

Pineapple Curry

  1. Remove the peel from a half ripened Pineapple.
  2. Cut the Pineapple into small pieces and add it into a bowl.
  3. Now add some toasted Fenugreek Seeds.
  4. Add 1 tbsp of Chili Powder.
  5. Add some Turmeric Powder.
  6. Add half a teaspoon of Pepper.
  7. Add 1 tbsp of Roasted Curry Powder.
  8. Blend some Cardamom and Cloves together and add it.
  9. Add Salt to taste.
  10. Add a piece of Cinnamon.
  11. Add some Water.
  12. Add a chopped Onion.
  13. Add some Curry Leaves.
  14. Add a sliced Green Chili.
  15. Add a piece of Pandan Leaf.
  16. Mix all these ingredients together.
  17. Heat some Cooking Oil in a pot over medium heat.
  18. Add 2 Garlic Cloves.
  19. Add half a chopped Onion.
  20. Add some Curry Leaves/
  21. Stir this mixture together for about 2 minutes.
  22. Now add some Mustard Seeds.
  23. Keep stirring and lightly fry this mixture until it is almost a golden color.
  24. Turn off the stove.
  25. Add 1 tsp of Chili Powder.
  26. Add some Turmeric Powder.
  27. Stir this mixture together thoroughly.
  28. Turn the stove back on to medium heat.
  29. Now pour the Pineapple mixture into the pot.
  30. Add some Water and collect any spice residue from the bowl that contained the Pineapple mixture and then add it.
  31. When this mixture starts to boil, add 1 tbsp of Sugar.
  32. Stir frequently and keep cooking until the Pineapple Curry is thickened to your liking.

Devilled Soya Meat

  1. Wash and then soak the Soya Meat in hot water for about 10 minutes.
  2. Squeeze the Soya Meat to release any Water and add the Soya Meat into a pot.
  3. Add Salt to taste.
  4. Deep fry these Soya Meat until it turns a golden color.
  5. Now heat some Oil in a pot over medium heat.
  6. Add 2 Garlic Cloves.
  7. Add half a chopped Onion.
  8. Lightly fry until it is a golden color.
  9. Now add several pieces of Pandan Leaves.
  10. Add some Curry Leaves.
  11. Split 2 Green Chilies in Halves, then cut them into Halves and add it.
  12. Stir frequently.
  13. Cut 3 Onions into rings and then add it.
  14. Turn off the stove.
  15. Now add the fried Soya Meat.
  16. Add 1 tbsp of Chili Flakes.
  17. Add some Turmeric Powder.
  18. Add Salt to taste.
  19. Add 1 tbsp of Sugar.
  20. Turn on the stove.
  21. Stir frequently.
  22. Add some Tomato Sauce.
  23. Add 2 sliced Tomatoes.
  24. Stir frequently for about 2 minutes.
  25. Transfer into a serving bowl.

Egg Rice

  1. Wash 500g of Samba Rice.
  2. Add the Rice into the Rice Cooker along with enough Water to cook the Rice.
  3. Add a piece of Cinnamon.
  4. Add 4 Cloves.
  5. Add 4 Cardamom.
  6. Add some Peppercorns.
  7. Cook the Rice.
  8. After the Rice is cooked, break 3 Eggs into a bowl.
  9. Whish the Eggs so that it is scrambled.
  10. Add some Pepper.
  11. Add Salt to taste.
  12. Whisk again.
  13. Heat 1.5 tbsp of Ghee in a saucepan.
  14. Add the Egg mixture into the saucepan.
  15. Stir frequently to ensure the Egg mixture stays scrambled.
  16. Fry some Onions and add it into the Egg mixture.
  17. Mix thoroughly.
  18. Add the cooked Rice.
  19. Mix thoroughly.

Devilled Kangkung

  1. Wash a bunch of Kangkung and rinse out all the Water.
  2. Heat some Oil in a saucepan over medium heat.
  3. Add 3 Garlic Cloves.
  4. Add a chopped Onion.
  5. Add 2 sliced Green Chilies.
  6. Add a piece of Pandan Leaves.
  7. Add some Curry Leaves.
  8. Mix thoroughly for about 1 minute.
  9. Now add 1 tbsp of Chili Flakes.
  10. Add some Turmeric Powder.
  11. Add half a teaspoon of Pepper.
  12. Add Salt to taste.
  13. Mix thoroughly.
  14. Turn off the stove.
  15. Add the Kangkung.
  16. Add 2 diced Tomatoes.
  17. Mix thoroughly.
  18. Add 2 tbsp of Soy Sauce.
  19. Turn the stove on to low heat.
  20. Add 1 tsp of Sugar.
  21. Stir frequently.
