Easy Biscuit Dodol without Coconut Milk

Sri Lankan Dodol is a traditional sweet made from Coconut Milk, Jaggery, and Rice Flour. For this recipe, we prepare it in a special way by adding Biscuits (Cookies). Therefore, we call this Biscuit Dodol and you don't need any Fresh Milk or Coconut Milk to make it. We used Nice brand cookies but you can use any type of plain biscuits such as Marie brand biscuits.

Ingredients

  • 250g of Biscuits
  • 150g of toasted Rice Flour
  • 2 tbsp of Milk Powder (optional)
  • Salt
  • Crushed Cardamom
  • Chopped Peanuts
  • 300ml of Kithul Treacle
  • 100g of Sugar
  • 2 tbsp of Semolina (optional)
  • Sago
  • Butter

Instructions

  1. Deep fry 250g of Biscuits over medium heat until it turns a golden color.
  2. Add the fried Biscuits into a bowl and then break it into smaller pieces.
  3. Add the pieces into a blender and blend into a paste.
  4. Add 150g of toasted Rice Flour into a bowl.
  5. Add 2 tbsp of Milk Powder (optional).
  6. Add Salt to taste.
  7. Mix these ingredients together using your hands.
  8. Add some crushed Cardamom and mix thoroughly.
  9. Now add the Biscuit paste we made earlier.
  10. Mix these ingredients together thoroughly using your hands.
  11. Add some chopped Peanuts and mix thoroughly.
  12. Heat 1 tbsp from the 100g of Sugar in a saucepan over medium heat.
  13. When the Sugar starts to caramelize, add half a cup of Water.
  14. Add 300ml of Kithul Treacle.
  15. Stir frequently.
  16. When this syrup is bubbling, add the remaining Sugar.
  17. Keep stirring until this syrup is thick.
  18. Now add the Flour mixture we made earlier.
  19. Keep stirring frequently.
  20. Add 2 tbsp of Semolina (optional).
  21. Keep stirring for about 15 minutes.
  22. When this mixture starts separating from the pan and clumping together, take it off the stove.
  23. Cover a baking pan with parchment paper.
  24. Rub some Butter on the parchment paper.
  25. Sprinkle some Sago over the parchment paper.
  26. Pour the Dodol mixture into the baking pan while it is still hot.
  27. Use a spoon and spread the Dodol mixture evenly in the baking pan.
  28. Let this Dodol cool down for a bit.
  29. Place the baking pan inside the freezer for about 10 minutes so that the Dodol can set.
  30. Unmold from the baking pan and cut into pieces.
