If you are tired of eating the same Pol Roti (Coconut Roti) every time, try one of these stuffed Roti instead. Each Roti contains a different type of filling such as a sweet Pani Pol, a spicy traditional Ihi Nala Lunu Miris, a spicy regular Lunu Miris, and a savory Parripu Curry Roti. These Roti are very quick to prepare and requires only a few basic ingredients so it makes a tasty snack for afternoon Teatime.

To make the Ihi Nala Lunu Miris for the filling, you can follow this recipe: 3 types of Traditional Sri Lankan Lunu Miris. In that recipe, there are 2 other types of traditional Lunu Miris you can make to stuff these Roti.

Total Time: 30 minutes

Ingredients

  • 250g of Wheat Flour
  • 3 tbsp of Coconut Oil
  • Salt

For the Pani Pol Filling

  • 100g of Sugar
  • 1.5 cups of grated Coconut
  • Salt

For the Lunu Miris Filling

  • 2 Onions cut into small pieces
  • Some Chili Flakes
  • Some Maldive Fish
  • Salt
  • Pepper
  • Juice from Half a Lemon

Instructions

  1. Add 250g of Wheat Flour into a bowl.
  2. Add 3 tbsp of Coconut Oil.
  3. Add Salt to taste.
  4. Mix these ingredients together.
  5. While adding room temperature Water, a little at a time, mix and form a dough.
  6. Rub a preparation board with some Oil.
  7. Break off pieces of the dough and roll them into a ball in your hand.
  8. Flatten each ball of dough using your palm.
  9. Place the flattened dough on the preparation board.
  10. Now scoop some of the filling of your choice into the middle of the Roti and then fold in half.
  11. Flip the Roti and flatten slightly.
  12. Rub some Oil in a saucepan and bring to temperature over medium heat.
  13. Place the Roti inside the saucepan and cook both sides.

For the Pani Pol Filling

  1. Heat 1 tbsp from the 100g of Sugar in a saucepan over medium heat.
  2. When the Sugar starts to caramelize, add 1 cup of Water.
  3. Add the remaining Sugar.
  4. Give it a stir.
  5. Now add 1.5 cups of grated Coconut.
  6. Add Salt to taste.
  7. Mix thoroughly until it is thick and all of the grated Coconut is incorporated with the Sugar syrup.

For the Lunu Miris Filling

  1. Cut 2 Onions into small pieces and add it into a blender.
  2. Add some Chili Flakes.
  3. Add some Pepper.
  4. Add some Maldive Fish.
  5. Add Salt to taste.
  6. Blend coarsely into a paste like consistency..
  7. Squeeze the juice from half a Lemon.
  8. Mix everything together.
